I've always wanted to attempt lasagna!
The noodles are mandolin sliced zuccini, marinated. The tomato sauce is...well... tomato sauce. There is a creamy (cheezy!) spinach layer, an almond ricotta layer, a walnut pesto layer, and a rich cheese layer, too. I just had fun with it! I just know it's the most filling, tastiest thing ever! It's a hybrid of Carmella's Luscious Lasagna (www.thesunnyrawkitchen.blogspot) and Russell James', plus some throw ins of my own. (I hope that link just worked...)
Vignette, because it's not "me" without one: my mom makes the best homemade spinach lasagna ever. Growing up, she told us it was 'green cheese' so we'd eat it. It was my favorite dish! I didn't find out until I was like 22 it wasn't green cheese, but spinach! I was so disappointed still to find out. Isn't that wild!? LOL. Now LOOK who's making spinach lasagna with actual green cheese......... So funny how life works out! :D
