I have been craving a really good cookie for some time now....I saw an oatmeal choc. nib cookie and I tweeked it. It came out absolutely wonderful! It tastes like oatmeal cookie dough..yummy!
**Oatmeal Chocolate Cookies**
1/4 cup raisins, soaked 15 min.
6 dates, soaked 15 min.
1 Tbs. cocoa powder (or carob)
1 tsp. coconut oil or light olive oil
1/2 cup each cashews and almonds, soaked 15 min.
1/2 cup raw oats
1 1/2 cups dried coconut flakes
3 1/2 Tbs. honey or agave
2 Tbs. raw almond butter
1/2 tsp. salt
1/2 tsp vanilla (opt...but adds good flavor)
1/8 tsp cinnamon
Process nuts, oats, coconut, cocoa, cinnamon and salt in food processor until crumbly. Add honey, coconut butter/oil, almond butter, vanilla and blend. Add drained raisins/dates to mix. Blend until mixed well...and it looks like cookie dough. Form into small balls and flatten slightly. Either dehydrate for a couple of hours, or just place in fridge for 2 hours and then gobble em up! You can also freeze them. All of the ways are great....you can always just eat it straight from the food processor as well....lol. :D
