View Full Version : Is my homemade nut butter raw?

I made cashew nut butter for the first time this evening in my Vitamix - just ground up the nuts until they blended into a butter.
The trouble is, I had to run the machine for about a minute and it got quite warm - and the butter came out quite warm. Have I ruined it, or is it still raw? :confused:
I was worrying about where to buy raw nut butter (tricky to find in Scotland) and thought I'll just make it myself. But now I think I might have ruined it!
And can anyone tell me how to make it properly if I have ruined it?

Could you stick your finger in it without burning it? If so, it's raw.

Also, you could turn the machine on and off periodically to keep it cool; just takes longer.

I've made nut butter in my VM before and it is warm, maybe even hot, but not hotter than 118 degrees or whatever the cut off number is.
I think you are okay.
Also, did you add an oil to make it smoother???

just because the temperature of the overall product is not 118 degrees, does not mean that enzymes were not destroyed during the process. some of the nuts surely exceed 118 degrees. something i learned in chemistry, but i cant really explain too well. i just know that it happens. still, thats really the only way to make it that i knkow of, and it is still for the most part alive.

I didn't use an oil - what kind of oil can you use to make it smoother? - it's a bit too thick to be honest!

I read you could use flax seed oil.
But when I made my in the VM it was chunky, not smooth.
