View Full Version : Ways to Marinade veggies? Low cal ways too?

Started to make eggplant parm. and had to marinade. Used tons of olive oil and lemon juice, poured over eggplant but takes lots of this and seems like several lemons too for this small amount. Can you offer suggestions on how you do same?
Low cal version would be nice to have for those days too.

Answering myself here:
warm water and salt is next times approach. Did it with some of this latest eggplant for the parmesan dish and will do it again: low calorie version. Got nuts in the eggplant parmesan so I'll take that fat. I let it sit last night as it was getting late so now off to put in dehydrator for few hours. Will end up freezing some too. Made way too much for me as hubby out of town. It surely looks like a 10 pounder. No kidding it is filled to the top and overflowing!!
