View Full Version : Veggie Nut Patties - Yum!

I tried the recipe I picked up on this forum for Veggie Nut Patties (by Karen Knowler in her 'new to raw food' ebook) last night - and oh my, they are gooooood!

I don't have a dehydrator so just put them inthe oven with the door open for about 45 minutes and they came out fine - some were a bit crumbly but I don't mind that.

Had them for lunch today broken into chunks and wrapped in lettuce leafs with a bit of hummus - yuuuummmm! :D Think they will become a staple on my menu as you can keep them in the fridge for a couple of days and they will be perfect to take to work for lunch with salad.

Here's the recipe:

Veggie Nut Patties
Ingredients

2 cups almonds or walnuts or pecans, or any combo of the three, pre-soaked (I used almonds and didn't presoak)
2 - 3 large carrots, cut up
1/2 large onion or more
1 large handful of parsley (I didn't have parsely so used dried herbs de provence mix)
1/4 cup lemon juice
1 teaspoon sea salt


Process all of it in food processor.
Dehydrate partially for a few hours.
If you do not have a dehydrator you can do this in the oven with the door open.

You are right on time:)
I hate to waste anything because things are costing more now.
I'll be glad when my garden starts producing:)

Great! Next time I make them think I'm going to remember to soak the almonds overnight first though, as even my Vitamix struggled a bit with mixing all the ingredients.

Also don't forget carrot juice! I made a lovely whole juice this morning with a large carrot, a whole valencia orange, a drizzle of honey (not raw I know, but I'm not aiming for 100% yet as I'm a newbie) and some mineral water. It was delish! ;)

How many patties will that yield?
And for clarification, lets say Mcdonalds sized patties.
Thin, maybe 3 + 1/2 inches in diameter :)

man ur missin out on the honey. its like the same exact taste but is good for you. its an easy raw to get.

Question. I'm a noob and I don't have a dehydrator yet. I don't even know how to use one really either. But, say I made the recipe here. How would I dehydrate it with an oven. I figure food must die at a certain temp. If your below that temp isn't it the same thing as dehydration? I wouldn't want to run my oven 24 hours though. I plan on getting one, but this is getting costly already.

Also, I bought what I thought was raw honey. However it has the consistency of sugar or crystals I guess. Is this the right stuff?

I think in SCotland raw stuff like raw honey is a wee bit harder to come by - I certainly haven't seen it in any of the health food stores. They probably do it down in London and places like that. BUT I think I'm def gonna check out some online raw stores and order in things like that - want to try raw chocolate for sure!

Think my Veg Nut Patties recipe made around 8 good size patties, or you can make one or two loafs out of it and do it that way. You can also eat the mixture as it is and not bother dehydrating - just wrap it in some cabbage or lettuce leafs and eat with a salad. I did mine in the oven with the door open (at a low temperature) for about 45 minutes - 1 hour. You don't need to leave it on all night! But having watched Alissa's dvds yesterday I think I'm going to try to get a dehydrator - there are some great recipes! :)

Wow that is awesome you lost that much in 4 weeks? I am so excited. I am just starting the raw food today.

Apparently it's normal for most people to lose about 5-10 pounds in their first week on raw, depending on how much weight they have to lose. Then I think it might slow up a bit - I'm thrilled to have lost a couple of pounds already!

But slowly and surely does it, and I'm just trying to focus on the bigger picture and all the changes happening rather than weighing myself too often.
