View Full Version : Yummy new substitute for pasta!

Today I found kelp noodles at the store that look like cooked spaghetti. The package said "a raw food". It's basically just kelp and the salt from kelp and water. They are ready to eat. I put some pesto sauce on and they are pretty darn close to pasta! They just have a little more of a crunch to them when you chew. They're pretty bland so they go well with anything. The brand is Sea Tangle and it was in the refrigerated section. I'm so excited to have found this! I definately think this is the closest thing I will ever find to the real thing.:D

I bought it at my local co-op that is 100% vegetarian. It's like whole foods, but they have more variety of certain things. They had it refridgerated with the miso. Maybe you can look up the brand and see where they sell it? All the uses on the package were asian inspired so I would guess maybe an asian store would have it too.

I just e-mailed the company and double check, but the package did say "a raw food". I'll post when I get a response. My store sells a number of different types of raw seaweed and nori so I don't see why these would have to be cooked?

They don't sell much outside CA and my BIL lives near one of their FL stores; however, called the Pembrooke Pines number and sounds like home number. I was going to send my BIL on a shopping spree.

Oh, thanks for reminding me of those delightful crunchy noodles! I didn't realize they were Raw. If they are in that gray area of Rawness, if you know what I mean, that might be one of the few exceptions I make, considering that it's seaweed. I much prefer them marinated and sitting for some time in the fridge.

Stina - they're not crunchy. They are floppy like cooked spaghetti...only they have a crispness to them when you chew that pasta doesn't have. Just want to make sure we're talking about the same thing. ;)

No, thankfully. They taste like nothing so they carry a sauce very well.

Yes! Before I went raw I found these at the East Co-op, I haven't had any since then but they did have them at least once so if you asked you could probably get them!:)

Yippy - I got my response too saying they are indeed raw. Now I can buy more! I think this time I'll make spaghetti and meatballs with them (I am addicted to Alissa's marinara). And the best part is you can eat the entire package b/c they have almost no calories. That same amount of pasta would easily be way too much! Not quite as filling as pasta though. :p

They must have had a bunch of emails because I got a response too LOL! My HFS doesn't carry these *sobbing*. I checked yesterday when I made my weekly visit. I'll have to look online, I might have to order them.

the websit Q&A states that they outer layer is removed which explains why the noodles don't appear green.
So my question is by what process is this layer removed and what sort of solution are they soaking in to allow for a 6 month shelf life after shipping.

Good question Life. All I specified in my e-mail was if it was heated over 118 degrees. Kelp has a long shelf life though. The only thing added is a form of salt that is derived from kelp and water.

i had these when i was in Cali, made sort of a thai peanut sauce out of almond butter, it was amazing. you need to jazz them up a bit with taste, but the texture is great!

I just got my noodles today. I put the noodles in a bowl (set aside) I then mixed in a different bowl nama shoya, white miso paste and chopped green onions and scallions & warm water. I poured the sauce over the noodles and ate them! Oh my they taste so good!

If the product so great, why isn't it in Alissa's book? ...hey, not trying to "start" anything, just curious that's all...I mean, she recommends Zucchini and Squash in the spiral slicer, why didn't she recommend the noodles, if it's 100% RAW???:confused:

Perhaps (like many of us) Alissa wasn't aware of this item when she wrote her book and still may not be aware of it's existence. I'm sure there are products on her site now that weren't on there (or mentioned in her book) before, either because they are newly on the market or because she just recently discovered them.

I made a red tomato sauce with tomatos, basil, olive oil, sea salt, sundried tomatoes and a few dates.
I rinsed the noodles with warm water and put them along with the sauce in a tupperware bowl (with lid) I sat this in my car (which it was about 85 yesterday) for 4 hours. It tasted like a warm pasta dish from an Italian Restaurant!

I bought 2 more packages of the noodles - I'm going to try it out with Alissa's marinara this weekend. I tried it with pesto sauce last time.

I am new to this, so if I was suppose to somehow add this to the original discussion, sorry. Someone had mentioned kelp noodles, not knowing if they were raw. I did some research, and some kelp noodles are cooked. The brand 'Sea Tangle' are raw. Their site is www.kelpnoodles.com. I called and spoke with someone at the company who said the temperature they use is 70degrees. I ordered them and they just arrived. On the package it says 'A raw food'. I have not tried them yet, though the info on the back of the bag claims a neutral taste. They look like a limp, moist, clear oriental noodle. As I have been raw for almost 7 months, I am very excited about this find. Just wanted to pass on the good news.

I have contacted the company a few times and I want to order some from them but I keep putting it off - thinking - do I really need this? (I spend so much on groceries as it is).
For those of you who have tried these... are they worth it? I'd also like to try their sea veggies but am a bit afraid as I HATE fishy tasting things. YUK...

I mean, I got used to the firm bite of zucchini and other veggies used for pasta...but for some reason I cannot adjust to these. So, I've been adding them to my husband's salad so I don't end up wasting them. But I don't think I'll be buying any more...I'll stick with zucchini and yams for my pasta.
But you may like them Ama...check your local natural food stores to see if they sell them since the website only sells them in bulk.

Thanks Rawk! I actually don't even eat my zucchini noodles when they are firm. I add salt and massage them then drain the liquid. I was always one to like my pasta more on the soggy size vs. al dente!
I think I'll pass on these then as I have checked my local HFS and they don't carry them. I'll stick to zucchini noodles... much cheaper and easier to find!

Ooh, those sound awesome! I've seen them already prepared in something, but never in the package. Gotta try them! Especially since I can't afford a spiral slicer.
Is there anyone in the Bay Area in California who knows where to buy these? Does Whole Foods have them? Or what about Rainbow Grocery? Or Staff of Life or that other hfs in Santa Cruz? I guess I could order them but I kind of like to see things before I buy them.

Has anyone tried these with just sea salt? I loved white spaghetti plain so would these taste the same as pasta if I just added celtic sea salt?

Definately won't taste like plain pasta. It is sort of tasteless. But in the end, it is seaweed, not pasta.

Bumping up this thread as I just finally found these kelp noodles at my local hfs and bought two packages and a package of their salted mixed seaweed salad. Am just so jazzed to try this as a Thai dish. Would love feedback if these noodles soften at all in recipes or in the dehydrator after they are sauced. Even if I don't simply adore them, I will probably try to incorporate them in my diet for variety alone.

Hi, yes, I recently discovered that they soften up heavenly well in a dehydrator. With a sauce.....it's so good that I can't believe I'm allowed to eat something like this on a so-called diet!

If I read the above posts correctly once the outer shell is removed from the raw kelp there is little or no calories left also there is little or no color left and there is little or no taste left. I am wondering why they have to add salt (from water and kelp) back in. The reason I am interested in sea plants is the natural salt and minerals. Does anyone know if the noodles have any nutrients (besides the added back salt) ?

Man... california has evvvvvvvvvveeeerrrryyything. I went to the site, and almost all the stores that carry it are in CA. I'm in a big city (Atlanta), and everyone is soooo unenlightened to the raw food movement. Our whole foods doesn't even carry raw tahini OR buckwheat! *sob*

Just wanted to share the sauce that I made for my kelp noodles tonight.
Hot & Spicy "Peanut" Sauce:
1.5 T. Raw almond butter
1.5 T. Raw tahini
1/8 tsp. sesame oil ***NOT RAW***
1 tsp. thai chili seasoning
2 sm. shakes of organic garlic powder
1 T. nama shoyu
1 tsp. agave nectar/syrup
I mixed the sauce up in a large bowl (one with a lid). Rinsed the Sea Tangle kelp noodles according to package and then added them to the large bowl. I put the lid on the bowl and shook it all up. I added a teeney bit of water to the sauce (it's a bit thick) until all the noodles were covered. I dumped the whole bowl into a glass pie plate and put it into the EX to soften the noodles and warm a bit. I keep my EX at 105 degrees. It's been in there an hour and the noodles are already soft. YUMMY but HOT!!!

they get real soft if you dehydrate or even prepare with sauce in the morning and let sit till evening for dinner.

Thank you for sharing your recipe for saucing these noodles. I made a sauce that was very similar--but didn't think to put in a little touch of oil. Made it spicy hot, too. Also added a large handful of mung bean sprouts, sliced red bell pepper, some chopped green onion tops and a bunch of chopped cilantro on top. The noodles softened wonderfully as it sat in the fridge for a couple hours before I enjoyed it for lunch. The only thing I didn't like about this dish was that I ate it all and wish I'd made much much more. Next time bigger serving size as seems to have shrunk down.

This is a mainstay in my raw diet, like twice a week with different sauces and a great beginner meal for your SAD friends!
