View Full Version : Raw pizza and pumpkin pesto stuffed mushroom delight!

Hi everyone, I just made dinner and it was so good I just had to share it. I made pizza crust that was a pretty red/pink color from using some beet pulp in it. I spread some tomatoe sauce on the crust, sliced some portabello like mushroom on top along with some fresh purple basel and yellow and orange bell pepper and spicy green pepper. Then on top some fresh shredded coconut and pineapple which had been dehydrated a few hours. After I took it out of the dehydrator several hours later I covered it in sliced avocado. It was so yummy and looked so pretty. While I was eating dinner with the family I am staying with I offered them a piece and was surprised when the husband really liked it and got pretty enthusiastic about it (which I definately didn't expect as the family eats meat and cooked food and before meeting me they have never known another vegetarian and certainly not any vegans or raw foodies lol). They both went crazy over the raw dehydrated pumpkin pesto stuffed mushrooms and kept telling me how good they were. I was so happy to hear they actually liked some of the food I made and were brave enough to try it! Then we began talking about food and the wife gave me the biggest compliment I have ever received when she said I should be a chef! Anyway I just had to share this meal experience (I feel so high right now) and I hope if you haven't already made raw pizza or stuffed mushrooms that you try it out. I followed Alissa's recipe for the stuffed mushrooms (except I used pumpkin seed pesto instead of regular pestro) which is an excellent recipe and when she says "These taste like a soft, breaded, cooked, stuffed mushroom" it really is true, they taste so buttery and breaded. i didn't realize this before but are you an exchange student of some sort. I noticed from you last post while speaking of your host family. Where are you originally from? If so, I think that is fantastic!

Hey thanks Rawjojo, I am living in Switzerland trying to learn to speak French fluenlty and I am living with a family working as an aupair. I've been here for about two months so far and I am loving it! (btw I sent you a message while back, to read it go to user cp and click on messages in case you didn't know...)

I am seriously considering opening up a raw restaurant in Switzerland after I get the language down maybe in a couple years. I think it is a great place to open a restaurant because most people here are into being healthy and eating good food (also used to paying way more for a meal than everywhere else I know of). If anyone here wants to move to another country and work at a restaurant in a few years let me know lol. I wish I could start up some kind of raw community or pot luck here but I don't know how to get in contact with anyone interested. Does anyone here have any experience starting up pot lucks or raw community of some kind?

I think you can search online, put up a post at a local store that has a lot of natural foods...good luck!

I know I would hire you to help with my events, just based on your positive attitude, beautiful approach and enthusiasm for Raw and Living Foods! :D

Hey that is a great idea! There are a few small health food stores around here which I think would be perfect for posting some kind of flyer there. I suppose I'll have to wait tell I improve my french though because I would feel too arrogant posting a flyer only in English. If I was back in the US I would certainly love to help out with your events! I worked with Juliano at a festival once and it was so much fun. I think before I open up a restaurant it would be good to have some more professional experience but I have the next few years to seek this out.

Juliano, eh? Now there's a real character! I bet he loooved you! ;)

Perhaps the host family could help you write it? If not, my DH can help...he speaks French and is a Vegan/ Organic Holistic Health Practitioner too!

Lol yes, Juliano is QUITE the character. We got along great and he wanted me to come work in his restaurant in LA. He said I could stay at his place and live there for free and I really did consider it but I was only sixteen at the time so it would have been difficult to make it happen. That would be so great if your DH could help me to write a flyer! I am not in any hurry so whenever he has some time and if he is willing to I think that would be super. My bags are packed just waiting for you to say come work for me. I will just leave them packed for two years and that is all lol.

Alright Flutterfly, when I open my restaurant you would be most welcome to come live here and help me with the restaurant! I am going to look into getting some investors interested but like I said it won't be for awhile. You sure all your stuff will be okay packed in bags for two years? :p
