I just got a spiral slicer, and I am looking for recipes for pasta sauces and any other ideas for sauces....

Hands Down, Alissa's marinara sauce! It is SOOOOO GOOD! Can't give you the recipe tho, you gotta get it from the book! :)

I either use a sundried tomato sauce or gus' pesto (can be found in Alissa's book)

I whip up a spaghetti or marinara sauce (make it different every time; don't really measure with the sauce)

I also love making a sort of asian noodles dish (think and sliced lengthwise) by adding peppers (red, yellow, green), red onions, a little choped green onions, carrots, and if I have other veggies.. I throw in some spices like cayenne pepper and also add a little bit of the pink sea salt; I mix it all together and add olive oil and usually I can put this in a ziploc bag and do some housework for a few hours or something and it "marinates" and softens like noodles. If I'm pressed for time; I can put this in a bowl of warm water while for about an hour (or the dehydrator I guess) or probably less than an hour...it softens the veggies and I really feel as if I'm having an Asian noodle experience.

Ooops..I forgot the Namu Shoyu/Braggs (braggs not raw i don't think)..this is what really sets of the flavor of the dish...just a few shakes is all it takes

Ok this is where it pays OR NOT to be a chef.
I love pesto and used it allot in sad diets. But I though about it and I can make a recipe raw off the top of my head so here it goes.

NOTHING MEASURED go buy taste as a chef I must repeat what was DRILLED in my head from my head chefs.

TASTE THE FOOD ALL THE TIME AFTER ADDING ANY THING!

So that said I will give you a good base of stuff to put in a food processor.

Hand full of baby spinach

Arugula - Half the amount of spinach

Pine nuts-cover the top of the stuff in there with them

Walnuts - bout 1 fourth of the amount of pine nuts

Sea salt to taste

Pinch (ONLY PINCH) nutmeg or leave it out

EVOO put a bit in then process well then ad more till you get the thickness you want.


OPTION is 1 clove of garlic

Pesto, tomatoes, fresh basil...

My artichoke/mayo sauce...

The other night I made a raw "cacio e pepe" - used Alissa's parmesean cheese, some fresh ground black pepper, and some spice. Delic.
