Just wanted to share this recipe with you.....We have lots of cucumbers in our garden this year!

Chilled Avacado Cucumber Soup
cucumbers, peeled seeded and diced (about 3 cups)
2 1/4 cups nut mylk
meat from young coconut
1/3 cup freshly squeezed lime juice, about 4 to 5 limes
2 avocados, quartered, pitted, peeled, divided
1 small red onion, finely chopped (about 1/3 cup), divided
1/4 cup chopped fresh basil, divided
2 tsp sea salt,1/2 tsp freshly ground black pepper

Toppings

1 cup seeded chopped tomato
2 tsp lime juice
reserved avocado, basil, onion, lime juice and yogurt

Blend soup until smooth - add toppings and chill for 2 hours.

Does it have yogurt in it?
is there any thing we can sub for it?

I use a raw cultured coconut cream as yogurt - cultured with kefir grains. You could just substitute a raw sour cream (young coconut meat, lemon & salt) or cashew cream.
