View Full Version : Un-dehydrated cookies?

Hi, everyone!

I've been searching for the last few days for recipes for no-dehydrator cookies and find that these are a rare beast, indeed. Can we start a thread of recipes for this?

I've been doing very well but find I need something like cookies to carry around to avoid temptations at night when I'm on the road doing errands. The rest of the day is taken care of, it's just the evening part. Larabars are great but they're too expensive to eat every day and too concentrated. I'm trying to avoid dehydrated foods right now. I found that I was starting to pack on the pounds besides which wasn't feeling as well as I feel I could.

How about the "raw fudge" that you put in the freezer? It will probably melt a little if you take it out with you, but they require no dehydrator.

I just love these Raw Oatmeal Cacao Nib Cookies (http://gliving.tv/shows/g-living-live-show-41-a-greenchefs-special-guest-kookie-karma-raw-oatmeal-raisin-cookies/) and so does my SAD eating hubby. I need to make them again! Definitely recommend trying them!

I just read the book green for life. It suggests that you should be consuming 1 qt of green smothies at minimum! Are you getting then in? Iam new and I was having those cravings and now they are gone. and if one sneeks in i realixe that I had been forgetting to drink them. Just a thought! It has only been a week and I can tell the difference already. those are some powerful things! Hope this helps!

Maybe you should carry aroung a green smothie with you!

You can take virtually any raw cookie recipe and make it undehydrated. If the "dough" is too "wet" or mushy, add more of the dry ingredient (usually ground nuts) to stiffen it up a bit and then shape into desired shapes and refrigerate/freeze.

You can also take any raw cookie recipe and perhaps roll into balls and then roll those into either crushed nuts, ground nuts, coconut flakes or sesame seeds (or poppy seeds even) and then flatten the balls into little round cookies...store in the fridge.

I just eat a larabar if I want a cookie!

They are travel friendly too!

They take out most any MASSIVE craviing!

Can't say enough about them. Without them my wife would have never come over to the dark side!

Maybe you should carry aroung a green smothie with you!Yes. I'm working on that. Smoothies don't cut it or me, they contribute to my sugar problem. And I'm afraid to say that it's difficult to keep up with what I need for juices, but green juices are what works for me.

However, as an interim step and until I get to that point, I've found that a couple of raw cookies do the trick. I just finished a contract that was a direct govt contract rather than an agency one so I could try the small handful of stuff our local health foods stores have started carrying in last 6 months and they do the job. But I'd rather make them myself esp. since my contract ended this past Friday. Those will last till evening fine whereas a smoothie wouldn't. I know that once I can manage everything to be able to have juices every morning, I'll be alright even in the evening but right now is the time that counts because I'm not there yet.

I'm going to try making some bliss balls. I think I have enough to make a small batch. So that's one recipe at least.

Also, going to keep looking for undehydrated cookies now.

Can't say enough about them. Without them my wife would have never come over to the dark side!Me, too. But they're not exactly cheap and I'm starting to get fed up with them even though I try to eat a different kind each time the times that I have them, once in a blue moon <g>.

They are good, though, you're right! <g>

I'll give that a try. I just have to experiment. Now that I'm a bit freer financially, feel I can manage that. :)

You can use less liquid in the ingredients, then shape.

If you have sugar problems, cut down on the dried fruit called for, omit any liquids, and use blended fresh fruit, and use stevia to sweeten. Stevia, the pure kind, should be green; not white, if you want it raw. It is ground up, dried stevia leaves, that's it.
Or you can buy dried stevia leaves and ground yourself. You'll have to do an online search; I've seen them, though I don't recall which sites.

I copied down the recipe from gliving.tv, and it's as follows:


Oatmeal Cacao Nib Cookies

12 Honey Dates
1/3 cup Nibs*
1 tsp Coconut Butter
1 cup macadamia Nuts*
0.5 cup raw oats*
1.5 cup shredded coconut*
3.5 tbsp raw honey/agave
2 tbsp raw almond butter
1/2 tsp. sea salt

Put nuts, dry coconut, nibs and oats (*dry ingredients) in FP and process.
Add salt, process, then add wet ingredients.
Finally, add dates and process again.
Mold dough into balls, and serve.
Makes 12-15 balls.
No dehydration needed.


Like someone above said, I would probably add stevia instead of the agave or the dates (one or the other, you need something sticky in there), just for calorie saving purposes.
I this recipe it would save about 110 calories if you'd sub stevia for the agave, but you could sub stevia for the dates too and save way more calories. I don't even know what honey dates are! I've only seen medjool and deglet noor.

I never have dates on hand because they are always in my stomach! Dates are a good sweet snack that you can take anywhere. I ordered some from nuts on line and they were so good. The ones you buy in the store is no where near as good.

I just made some last night that are based on a recipe from Raw Food Made Easy for 1 or 2 People by Jennifer Cornbleet...

Grind until coarse crumbs:
1/2 c almonds
1/4 c walnuts
pinch of sea salt (to taste)

Add:
3/4 c pitted dates
dash of almond extract
dollop of vanilla paste

Grind until you can squish it into balls.
Flatten balls into cookie shapes.
Refrigerate or freeze until firm.


These are soooooooooo good. Truly addictive, but very satisfying. I will freely admit that I tend to go overboard on goodies that I really enjoy, but after 2 of these, I was completely satisfied and didn't need to eat anymore.

Many times i am tempted to eat cookie while out shopping and the stress is killing me but i'm doing better.
Thanks to you both now i don't have to tempted to do wrong, you've made it so easy for me to overcome my cookie cravings while out shopping.

Raw Cookie Dough Recipe

2 cups pecans (not soaked)
1 - 2 TBS Coconut butter
1-2 TBS Maca
1 TBS raw honey (you could use any sweetner like agave)
1 vanilla bean (ground first)
cinnamon

Optional: cacao nibs/coconut

Blended all of the above in a food processer until smooth. Add soaked almonds and cocao nibs and/or coconut and pulse chopped until it was mixed but still kind of chunky.

This is also good in vanilla ice cream!!!

Cranberry-Citrus Power Cookies!
Makes 2-3 dozen power cookies

1C almonds
1C dried coconut
1C oats
1/2C dried cranberries, unsweetened or fruit sweetened
1/2C agave syrup
1/4C fresh orange juice, about 1 orange
1/4C ground flaxseeds
1/4C slivered or chopped almonds
2T fresh citrus zest, about 2-3 large oranges and/or lemons
1T vanilla extract
1T pumpkin pie spice
Dash of sea salt

Process almonds into coarse meal in food processor, then add the coconut, oats, ground flax, spice and salt. Pulse food processor to mix dry ingredients. Then add juice, agave, and vanilla, and pulse to incorporate to a dough-like consistency. Stir in cranberries and additional almonds. Shape into cookies and chill, or dehydrate overnight until outside is crunchy.

I like them dehydrated a bit, but Tanja prefers them just refrigerated. Either way they're great.

I'm wondering because I'm thinking that one could probably subsitute buckwheat, wheat, or kamut for the oats for different flavours. But although buckwheat always processes so easily, wondering about the grains themselves. :)
