Cherry shortcake

Tonight I was inspired by the fantastic video from Storm about a strawberry shortcake, you can see it on youtube http://www.youtube.com/watch?v=uC_r4m6oAzk

I made a different version using agave syrup instead of honey, apricots intead of dates, and cherries instead of strawberries.
Absolutely amazing!!!!!

Oh sorry Bethanie, you are right!

Ok this is what i did (i apologize in advance for my terrible english):

grind into powder 1 big handful of nuts of your choice (i used cashew and brazil) with a dash of salt, then add 6 dried apricots and a teaspoon of agave. Blend well until doughy and then set aside.
Put into a vitamix a cup of cherries, a dash of salt, a teaspoon of agave, a spoon of coconut butter and blend until smooth. Add to the apricot-nuts mixture and mix - it doesn't not have to be smooth. Add some chunck of cherries, and enjoy.
So good!
