Has anyone seen a recipe for mock Thousand Island Dressing. This was my favorite sweet dressing when I was out of control on sugar (which RAW cured for me in two days). I thought it should be easy to combine tomatoes and creamy nuts or seeds and with the right seasonings, have something resembling the original sad version only better. I'm not a very creative non-cook yet. Also, can't handle garlic, onions or hot stuff - actually prefer most foods pretty bland or leaning towards the sweet side - its the Pitta constitution!

Remember seeing this earlier:
Thousand Island Dressing - by Rose Lee Calabro from "Living in the Raw"
2 red bell peppers
2 tomatoes
1 c. celery, chopped
1/2 c. pine nuts, soaked 2 hours
1/2 c. sunflower seeds, soaked 6-8 hours and rinsed
1/2 c. fresh parsley
1/2-1 c. water
4 TBS. lemon juice
1 tsp. sea salt
Blend in blender until smooth and creamy. Adjust seasonings to taste

Thanks to both of you - I didn't think about red peppers. The recipe sounds great and I will try soon. If I'm craving a sweeter dressing a TLB of agave would do the trick.
You're right, the search engine (which I hadn't noticed yet) would have been a good idea.
