View Full Version : Need mashed potato recipe using cauliflower!

If any one can point me to a moc mashed potato recipe I'd be very grateful. I've seen them when cruising books at Borders I DIDN't buy but can find nothing in the books I do have. I was thinking mushroom gravy would be a great topper. Suggestions welcome!

I'm just guessing off the top of my head here... making it up as I type... I'm thinking if I wanted some mashed potatoes I could blend them in the blender with maybe some olive oil or maybe coconut oil (I'm thinking for that butter taste)...perhaps a little dash of pepper or salt and then warmed in the dehydrator....

You might be able to add some zuchinni that you have blended in the food processor if the texture isn't creamy...

just thinking out loud...hope you find a good recipe

Do you have Alissa's book and DVD? I'm pretty sure there's a mashed potato (cauliflower) recipe in there...

Yes, I also highly recommend Alissa's book ,if you haven't ordered one already. In the interim, if you do a search, you can find quite a few mashed potato recipes floating around here ~ Cathy

Thanks everyone - I haven't gotten the book yet - but, it's on the top of my list. I need more recipes for this transition phase, as I have gone to bed very hugry several nights simply because I didn't know what to eat. I've tried making breads but all the grains I've tried heat me up so much I sweat in my sleep. Quinoa is the only grain that seems to be OK for me, I made Taboule with it and it was wonderful. Also need to be careful with sugar as I'm pre-diabetic so that limits fruits. I'm eating lots of green smoothies, carrot soup and pate. Also make yam chips, flax crackers and keep prepared trail mix on hand. After a while you just can't eat another salad or smoothie without a little change. Just the same, I'm hanging in there and have bot been tempted one bit to eat cooked stuff! I'll be using the search engine a lot now!
