Congrads on purchasing Alissa's book! YAY YOU!
Yes, provided they are sprouted. Do a bean search and see on here what you come up with. I don't think a lot of folks (me included) eat a lot of beans as they are harder to digest (IMHO). But there's some recipes floating around here.

Question:
Why do they have to be sprouted? I soaked some chick peas over night....they were very soft. I made some humus. It was very delish. Tasted like the cooked version once I had added the tahini and the lemon and garlic. Went great with cut up veggies.

Hey Jeannie - sprouting is just a term. For chickpeas overnight can be okay. Sprouting doesn't always mean obtaining the "tail". For instance, we sprout nuts, but they don't get a tail. Hope this helps...

Jeannie,

The purpose of soaking and sprouting is to make the nuts, sprouts and seeds easier to digest. A lot of them have enzyme inhibitors, which are released upon soaking and sprouting. Alissa's book has great info about it!

Thanks guys! yes, it is helpful. I thought sprouting meant making like bean sprouts out of them. I thought "soaking" was just that.....soaking til soft.
I really enjoy the chick peas soaked. I've actually made several snacks out of them. It will be awhile til I can afford to get the book so I appreciate the info.;)
