I have searched everywhere for a raw gumbo recipe. Does anyone know the ingredients for making one? Thanks in advance.

I don't have any ideas but will watch this thread to see if someone else does! My Louisiana Cajun hubby might even try something like this in a raw version!

I don't know what is in the cooked version, but I bet if you posted it here, then we could come up with a raw version.

Of course the cooked versions (and there are many, many versions) are based around a lot of meat and a roux made with flour and oil as the base. Lots of water is added to make it soupy. Could be chicken and sausage, or seafood, those would be the most popular as well as Okra Gumbo.

This would be a basic vegan version...

Vegan Gumbo
1 onion. chopped
1 green pepper, diced
1 stalk celery, chopped
2 large portabella mushrooms, cubed
2 cups okra, sliced (fresh or frozen)
salt and pepper to taste
1 can Italian-flavored crushed tomatoes
garlic powder
1/8 teaspoon (or more) cayenne
1/4 teaspoon (or more) crushed red pepper flakes
tabasco sauce
1 cup corn, fresh or frozen
All cooked and served over rice with a sprinkle of gumbo file powder.

Now I will add, that for a Cajun, most wouldn't eat a veggie version of this. It has far too many veggies in it! My hubby likes his with chicken and sausage, lots of white rice to serve it over, and really it is like a spicy broth of flour and oil roux with lots of water to make it soupy.

But with this vegan version, maybe a raw version could be created out of it and serve it as a soup over finely chopped cauliflower for the rice.

Here is Cherie and my version of a raw gumbo

RAW GUMBO and Rice (recipe below)
1 medium onion, chopped fine
1 medium green bell pepper, chopped fine
1 cup thinly sliced celery (include the leaves)
2 teaspoons crushed fresh garlic
4 ounces smoked sausage (see recipe below), crumbled (about 7/8 cup)
1 cup unsalted tomato sauce (recipe below)
1/2 cup miso broth or 1/4 cup miso mixed in 1/4 cup coconut water
2 teaspoons ground paprika
1 teaspoon Cajun seasoning (recipe below)
3/4 teaspoon dried thyme
1 cup corn cut from the cob
1 cup cut okra
2 cups of chopped mushrooms – this is your choice – oyster mushrooms have a seafood taste and may accommodate
6 ounces favorite sea vegetable for “shrimp” flavor (crush up and then soak in kelp water)

Directions
Place the onion, green pepper, celery, garlic, sausage, tomato sauce, broth, paprika, Cajun seasoning, thyme, vegetables and sea vegetables in dish. Mix until the flavors are well blended. Dehydrate for about 1 hour.

Tomato Sauce
11/2 Soaked sun dried tomatoes
1-diced tomato
¼ olive oil
Blend until smooth

Cajun Seasoning Mix
4 tbs salt
11/2 –2 tbs cayenne pepper
2 tbs dried garlic
2 tbs ground black pepper (if you can try to grind)
2 tbs white pepper (optional if you do not have)
2tbs onion powder
2 tbs garlic powder
Blend and store, use what is needed in any recipe

Smoked sausage –
Half cup of cashews soaked
Half cup of walnuts soaked
Some salt
1 clove garlic
a little fresh sage
Tablespoon of fresh lemon juice
1 teaspoon of liquid smoke (if you are not a purist)

Just drain the nuts and puree everything together, adding as little or as much (I use 1 clove) of garlic and salt as you like. You may have to add a touch of water or more to get it going. Drain it through cheesecloth; otherwise it'll take forever in the dehydrator. Smooth it on a teflex sheet and dehydrate it until solid and dry, but still a little moist, and somewhat breakable. Break it up into little bits, and add it to gumbo.

Rice
2 parsnips
1tsp lemon juice
1 tbs olive oil or unflitered sesame oil (this provides a smoky flavor)
1 1/2 tsp canjun seasoning
chopped tomaote
a pinch of celtic salt

Place the parsnip in the food processor and chop till rice like, then add lemon juice, olive oil or unfiltered sesame oil, and a little salt, let marinate for a few hours - taste it to ensure that it has the flavor you desire and it is soft enough.

Cinnamon, you are inspiring!

Raw Cajun Gumbo:

1 sweet onion, chopped
1 green pepper, diced
1 stalk celery, chopped
2 large portabella mushrooms, cubed
2 cups young okra, sliced
1 large tomato, pureed
1 large tomato, diced
1 cup corn
garlic powder
1/8 teaspoon (or more) cayenne
other seasonings to taste
Some dehydrated tomato powder would be real good too

Take the above ingredients, mix raw and leave in the refrigerator over night to soften. The veggies will also sweat, becoming more liquid.

Dirty rice:

chopped cauliflower
oregano
sage
finely minced onion
finely minced celery

Also let this sit in the fridge overnight.

Set everything out a couple of hours before mealtime to return to room temp. Then add cubed avocado to the gumbo mix just before serving over the dirty rice mix.

OMG, Sweetlips and Doe, thank you both so very much. I can't wait to try this. I am a big okra fan and a young lady mentioned that she makes a mean gumbo with orka during the David Wolfe seminar in Atlanta. She said that she would email it to me but I never heard from her. But I have not been able to get it out of my mind because I love OKRA in so many dishes and this is one dish that I would love to try it in. Thanks a bunch.

Has anyone made this? I am going to make some gumbo this week, and my wheels are turning.

I wonder about the sausage in this recipe--have you made it? I dont think I'll add corn unless maybe as a blended thickener.

I can kinda imagine it as a cajun flavored version of raw chili...Ill definately have to experiment with the okra..maybe de-seed it so that it won't be slimy?

Hey-

Just poking around for an okra recipe and this thread came up....

So has anyone made this gumbo and do you have any tips? Or any other okra recipes besides the basic toss with chopped veg and olive oil?

I make what I posted. Here is another recipe for Okra:

Combine okra, scallions garlic, 4 Tbsp lemon juice. red pepper, 1 tsp salt, 1 tsp black pepper and 1 Tsp maple syrup. Mix well. Allow a few minutes to marinate. You can always add any veggies - to this as a stew - asparagus are great as well as mushrooms. I also love cilantro, avocado and lime instead of lemon juice.

just made a variation of this and i can't believe how amazing raw okra tastes!! never would have guessed from only having the cooked...

used okra, fresh peas, tomatoes, onion, jalapeno and made a 'sauce' with soaked sundrieds & olive oil and a little water.

delish!

These recipes sound incredible!!!! I'm gonna add this to my to do list!!!! Lots is ingredients don't scare me, especially having made Alissa's incredible Chili!!!! Definitely will do next ..year!!!!
