OK I bought raw almonds but I think I am suppose to soak them for 12 hours? IS that correct. Also I just bought a dehydrator am still waiting for my book, didn't know I could make bread. Just starting out so any help would be great. Thanks Susan

You can eat almonds as is yet, it's best to soak them for easiest digestibility. The bread wont be as you know it.

just soak pretty much anything overnight, or while you go to work (done in time for dinner) and you're good.

All you're doing with the soaking stage is freeing up the digetive enzymes. Until they're soaked, almonds have an enzyme inhibitor, which soaking de-activates in essence. So soaked almonds taste sweeter and smoother, and are easier on your tummy. That's all.

I know it sounds like alot to digest but after about a week, you'll see that it is not at all complicated. People do really well when they keep it simple!

Here's the easy version which will alow you to skip most of the soaking and sprouting charts. Honestly, it is not technical at all! Think of hw easy seeds take in your garden...or at random in the forest/wild!

Ok here it is

•Soak dang near anything overnight or during an average length work day

•Rinse it off

You're done soaking Tah-dah!

If you want to sprout

•take the soaked seeds/nuts

•rinse them

•put them in a mason jar covered with a little nylon mesh or screen or cheesecloth to cover, and secure with a rubberband.

•Turn the mason jar upside down so excess water can drain and allow to hang out like that for a day or so, until you see the hint of little baby "tails" at the ends of the seeds...just tiny buds really.

•Rinse and eat

Thanks good information. Now Can I have cashew almond or peanut butter. It says dry roasted cashews, does that mean it is no good? Can I make my own? Thanks again Susan

The word roasted means cooked. What you choose to eat depends on your intent and purpose. If it's bottled, packaged or canned, it's highly unlikely it's raw. Sure you can make your own. There are threads one here about that.

roasted means super-cooked over a fire so n dry roasted stuff...sorry.

Peanuts are pretty much 86'd on this diet, but it turns out well since many peanuts are infested with molds, and mainstream commercial peanut butter is just full of rat hair.

You will prbably find cashew butter to be EVEN BETTER than peanut butter!!! It is naturally sweeter, and creamier than peanuts.

You can make you own by just grinding up your cashews in the food processor, possibly adding a little raw/organic oil to get the texture you want.

Also, if you grind up cashews and add a little water, you can make a delish, rich cream. (add vanilla or almond extract to frost or glaze desserts depending on how much water you add)

If you take that cream and add lemon juice or even better- rejuvelac- you can make a sour cream that tastes just like the real thing.
