I tried this recipe on my formerly SAD-eating (but now doing the raw challenge) man and he enjoyed it. Good for transitioning. Gorgeous on a plate. Vary the amount of jalapeno peppers according to your tolerance.
Green Apples with Jalapeno Spread and Tomatillo* Relish
makes 2 very generous servings
For the Jalapeno Spread, combine in a food processor:
1/3 cup water
3/4 cup cashews, soaked 1 hour
2 tablespoons sesame seeds
1/4 - 1/2 cup jalapeno peppers, seeded and chopped coarsely
1 clove garlic
2 tablespoons lime juice
1/2 teaspoon salt
Blend smooth. Refrigerate until ready to serve.
For the Tomatillo Relish, combine in a food processor or blender:
4-5 tomatillos (about 1 1/2 cups), outer skins removed and roughly chopped
1 jalapeno pepper, seeded
pinch salt
Blend, leaving a bit of texture. Set aside until ready to serve.
To assemble:
Peel, core, and slice crosswise into 1/4" disks:
2 green apples, such as Granny Smith
Place an apple slice on each plate. Smear with Jalapeno Spread. Sprinkle on top:
fresh cilantro leaves
Repeat layers 2 or 3 times over, finishing with the cilantro. Drizzle Tomatillo Relish over tiers just before serving.

*Tomatillos are nightshade plants, very much like tomatoes, but pale green. They have a papery cloak around them that is removed before eating, and can be found at many supermarkets or Hispanic groceries.
