I can't bear to see RowanC cry!

So I looked up some stuff on tapioca. Did you guys know it's from the root of the yucca plant? So I wonder...could you get a yucca, put it in the food processor, mix it with some agave and dehydrate it, and then maybe put in with some almond milk or something and warm in the dehydrator? Just a thought. Could be a culinary disaster. :)

FYI -They sell yucca root in the Spanish section of the produce section here in Florida at Publix. And also in CT at Shop Rite stores.

Also- I asked my husband who is Caribbean/tropical and he thinks they grate the root and then squeeze out the juice and then BOIL it (the extacted juice)to make the actual tapioca pearls. Maybe you could just put the yucca root through the juicer and then dehyrate the juice until it was all the way dry then soak the dried juice in almond milk to make the pudding? Who knows. It might work. I love tapioca too.:p

Good luck and may the force be with whoever tries out this mad science experiment...

You can research to see if it is cooked or not.

I have all my wisdom teeth!

Have a great day!

I would advise against using the root. It contains cyanide, and if you don't know the exact extraction methods, that could be a really bad meal. :p

The Mayans evidently used the poison from the root to make blowdarts. Tapioca and weapon? Who woulda thunkit?

The cassava plant is native to South America and the West Indies, where its thick, fibrous roots are used in a variety of forms: bread flour, laundry starch, an alcoholic brew, and of course, tapioca pudding. As the Encyclopedia Britannica tells us, it was probably first harvested by the Mayans.

Budi Acid Jaya, a tapioca starch producer in Indonesia, uses processed cassava roots to make raw materials for crackers, toothpaste, paper, and textiles. Visit the site for an overview of the starch production process. It involves lots of heat and water.

We suggest you don't try making your own tapioca at home. Cassava roots have traces of cyanide in them! The ever-resourceful Mayans figured out how to extract this poison for their blow darts, leaving the uncontaminated roots free for eating.

No, Rowan! I think you can use the yucca that's sold in stores. It's the deeper part of the root, maybe?? Hmmm. We'll find your raw tapioca, lady!!

According to my dh, Caribbean Felix, who grew up with his mother growing and making homemade farina/cassava products...

There are different kinds of cassava.
It is usually cooked when eaten because it tastes like raw potato when it is eaten raw. aka NASTY!
There is a whole big process to preparing it and every part of the plant is used -some for food, some for laundry starch, and raw for medicine (he thinks topically for skin eruptions but cannot be sure.)

He doesn't know of anyone who was ever harmed by consuming/using cassava in any of the above mentioned ways.

He did however say that they do not generally make the cassava into tapioca on the island because it is considered the starchy leftover garbage, that remains after the farina and the laundry starch is made! uggh! That part they sell to the Europeans who make tapioca out of it...:o

So I say whatever floats your boat...
but I wouldn't count on raw cassave/yucca to taste good...

I have this memory of some of those folks on those reality shows eating "tapioca roots" on an island. I don't recall because I never watch those shows; but I do recall that. I don't know if they ended up cooking it somehow or not. Maybe there is some reference to it online somewhere.

I think...I think it was Survivor show; but I could be wrong.

Best,

I found a recipe online for you. Haven't tried it, but figured I'd post the link.
http://www.rawfoodtalk.com/archive/index.php/t-714.html
It says:
1 banana,
1/4 of a Durian,
soaked flax seeds
and a little agave nectar.

The texture and taste were a lot like tapioca pudding which I used to adore. This is a great substitute! :D
