They are great dishes!
I dont like my dehydrator so if I just put the marinated veggies in a large plastic ziplock and put in 110 degree water it would heat it fine right?

You actually don't even need to dehydrate/warm up the marinated dishes. Just leave them to marinate at room temp for at least a couple of hours. Hum, about the water idea, not sure as I've never tried it but perhaps you could do that after the original couple of hours of marinating; just to warm the veggies up? But like I was saying, you could also skip that step altogether.
