View Full Version : Fresh pasta recipes?

I know that a lot of "pasta" recipes call for zucchini, squash, or carrots, etc., but I am wondering if there is a "fresh pasta" recipe out there that uses other types of ingredients - for example, has anyone made fresh pasta with a combination of nuts (like the leftover almond meal), etc.?

I am just wondering because I really enjoy fresh pasta as a vegetarian, and I would think that you could do something similar raw with the right combo of ingredients and a pasta maker or rolling pin and knife. Well, and I am not a big fan of zucchini.

...but I'm thinking that you might take your almond and other nut leftovers, run them in an FP or blender to get them fairly smooth adding water as needed, and then spread the mix out on a solid dehydrator tray to dehydrate. I dunno, maybe there's so much oil in nuts that they'd never get very dry, but if they even got as dry as regular wheat flour dough after a session on the solid tray and then a flip to the mesh one, that'd be workable, I'd think.

Anybody know if that would work or sounds like it could?
