but what else could i use the coconut meat for?
The meat is hard, i can't slice it so i would love to know how do you all use the meat from the coconut. Also the coconut water, i drink mine.

Uh... eat it? :)

You can also throw some in your green smoothies. That's what I use it for: smoothies and pudding.

Another idea is to grate it (I use a salad shoother which makes nice large grated pieces - larger than the food processor), and dhydrate it. I use it for cookies, cereal toppings and in my trail mix of soaked and dhydrated seeds and nuts.

I have some in the fridge now.
Also i thought that i could save the pulp and put it in the freezer and dehydrate it at a later time and make coconut flour.
Do you think that would work? Maybe use it for cookies or some type of bread.

Just today I used some (lots actually) in my "brownie mix". I usually add dehydrated cocoanut. It was wonderful.

Receipe???

1/2 cup of almonds, sunflower seed, & walnuts (any variety of nut or seed will work, just get about 1 1/2 cup total)
2 tablespoons carob
1/2 cup dates
1/2 to 1 cup cocoanut (dry or not)
2-3 tablespoons honey

Food process till yummy. Press in pan. Refrigerate. Enjoy!

stick it in a food processor and once it's down to a size that you like, suck on some of through out the day. Put it into your ice cream dishes, in trail mix like mentioned above, use it as topping or your fruit dishes, stick it in your smoothies - Just eat it:D
