View Full Version : Walnut Mushroom Loaf?

I just made the Walnut Mushroom Loaf in Alissa's book on page 399 & it was the first recipe I have made from her book that I didn't like, actually it was awful. What is the texture supposed to be like? Mine came out really fluffy, kind of like mash potatoes but with a really bad taste, color, & smell. Did I do something wrong? I hope it wasn't the shrooms! I bought them at the farmer's market and they smelled a little funky. I just don't understand b/c I love mushrooms and I love walnuts, but this was a total bust!:mad:

mine was yucky too. tasted like chopped liver. i figured it was just a personal taste thing. i like mushrooms -- but the combination did not work for me.

may i recommend the mock slamon pate -- yummy!

I ordered the Box from Rawvolution and his nut loaf was fantastic. I think it is in his book.

I love this recipe. I believe it’s supposed to be ground up but not 'fluffy".

I make mine in the food processor. if you are making it in the vita mix, maybe it’s getting too ground up and 'whipped'?

It does remind me of chopped liver a little bit.

there was a different menu this morning but when i checked in the afternoon it looked really good. it's extragavant for me but it will be such an indulgence not to have to shop or cook for a week.

Kipora-did you end up throwing it out or is there something you can add to it or serve with it to make it edible? I think I am going to toss mine, I hate wasting food but I had it for dinner tonight again & it was pretty nasty. And I doubled the recipe for some reason which was not too smart but I had a massive amount of shrooms to use up. I will try to mock salmon for sure in the upcoming weeks. In the mean time if I keep having the shroom walnut loaf for dinner I might get skinny b/c I can only stomach a bite or two:rolleyes:

I just looked at the box. That is pretty cool, at first I thought it was kind of expensive but then I realized that I probably spend more than $100 on groceries alone eash week let alone gas & prep time. I should actually calculate my raw bill and see, I always see these posts about people & their outrageous raw grocery bill but I have absolutely no clue how much I really spend myself. And I have a bad habbit of going to 4 different stores (the co-op, whole foods, the mainstream grocery store, & then the farmer's market/or the cheap produce store called Aldi) each time I get groceries at all four in one day b/c they each something different that I must have and use every week. Does anybody else shop at more than one store every time they need groceries or is it just me? I'm picky but I am happy & have everything I need to stay on track.

Maybe you can try dehydrating the walnut loaf. I hate wasting food too.

I thought the same thing about the box but I definitely spend a lot on groceries and it's also time consuming to prepare, pack and carry my lunch to work. Yes, I go to several stores and Greenmarket too!

i tossed it. i don't believe in eating things i dislike (like a human trash can).

i've ordered the box twice -- i loved some things and others were okay. all in all -- freshly made food is way better.

it's definitely worth a try though.

I shop at 3 different stores, a week. I ordered the box 3 weeks in a row and decided this week to make things. (so I don't forget how to prepare the food).

I absolutely do that. I shop primarily at a local organic grocery store, but there are two other organic mom and pop stores that I go to, as well as a weekly trip to the Asian market for my young coconuts, ginger, and garlic. I also get some stuff online 'cause it's cheaper and I can get bulk. I tend to split my trips up during the week, because hours of grocery shopping just isn't my idea of fun. :)

The raw box is the most genious thing I have ever seen! It's like Jenny craig pre made meals. Super sweet! If I knew what I was buying I would try it but im scared to try new things.. Bah:o

That is a very valid point Kiropa!!! I never thought of it that way, I am not a human trash can so I should never treat myself like one. Why force something down just b/c I made it when I actually hate it and it makes me gag? Okay I am going to throw it out right now in memory of you:D Thanks!
