Well first where to keep it. If you keep it in the fridge, it will be a constant solid. Coconut butter and coconut oil are one in the same. It is butter at colder temps. and oil at higher temps.
A lot of folks use this in their smoothies to add fat content - no need to worry, it's a good fat! Also, there are oodles of recipes around which call for coconut butter (oil). Such as candies or icings (these are just off the top of my head). It helps solidify them.
I'm sure if you search, you'll find many more recipes and advice on coconut butter (oil).

It also allows you to use less fruit in smoothies if you need to cut down for health reasons like candida or to save money. Oil & butter are different in taste & texture. The butter is made from whole coconut meat, not just the oil. The oil is easier to use in most recipes.

Hey Rawererin,

I have just found the joys in coconut butter as well. Tanja uses coconut butter in her desserts on Freshtopia.net and so I searched it out and WOW, I love it.

I believe someone else answered on the makeup of the butter. It is actually the whole coconut, not just the oil. So it does include the oil-which will separate out if heated too much- and the pulp which is amazing mixed in desserts or in smoothies or whatever. I would keep it in the frige if it is hot where you are or in a dark cupboard if it is moderate.

Regardless of where you keep it, just use it. :D
