Is there one or anything close besides ACV? What's this ume plum (sp?) I've been seeing?

Ume plum vinegar is created using umeboshi plums...but like balsamic, it's not raw. I'm not 100% sure, but I "think" the only raw vinegar is apple cider vinegar - Bragg's in particular. But like with anything else, you have to decide if you want to use such items as balsamic vinegar if it shows no ill effects in you. Just like some raw recipes use nutritional yeast, maple syrup, etc... none of which are raw but are used to produce a certain flavor or effect. Gotta pick and choose your battles with some of this stuff!
