I made some really yummy cookies w/leftover Almond meal, honey, vanilla & was wondering if anyone had any other ideas. I just got my Dehydrater & I have been really experimenting. This is soooo Fun !!! :p

I also make pie crusts with almond meal, dates, and perhaps some cinnamon. The pie crusts, I usually don't dehydrate.

If you have Raw by Roxanne Klein and Charlie Trotter, they have some really great recipes for Almond flour (almond meal leftover from making mylk then dehydrated and ground til fine in a coffee or spice grinder). Most of them are for desserts though like dehydrated cookies and tart shells. There is one savory recipe that i really want to try, but it is quite elaborate: Sun-dried tomato and herbed cashew cheese tarts.
Its very easy to experiement with almond meal. Today I made chocolate-raspberry cookies by using about 1 &1/2 cups almond flour, a couple tablespoons of almond butter, about 1/4 cup liquid sweetener (agave, maple syrup, etc.), salt, cocoa/carob powder and a handful of fresh raspberries. I'm not exactly sure what exact measurements i used, but i just add everything to taste. A little lemon juice would be really good, but i had none, so i added water to soften the recipe a bit. Then i put them on a solid dehydrator sheet, and they are currently drying! I hope they turn out OK.
The only downfall is that most of the recipes with almond meal are pretty fattening, but it is a really great way to keep from wasting those precious almonds!

:) Wow, Great ideas...Thanks everyone !!! :p I used some carob, raisins, honey & walnuts & dehydrated overnight w/another batch...very good also. I think I will order a few more "Raw" books. I really enjoy "preparing/dehydrating." So funny, I always HATED COOKING.
I'll keep you posted on my latest "concoctions".

:) Kristi, I just went to the link...Great ideas. I think I'll apply a facial /pop some bread in & make some cookies & crackers. If anyone wants some great ideas, check out Kristi's link. :)
