I feel like I make the same things all of the time and I'm looking for something creative, yet nothing that requires too much time in the kitchen as I am usually on the go. But I can set aside an evening or two in the week to work on foods.
Looks like I'll be preparing dinner for a friend and her friend this coming weekend. Problem is, I'll have to make the food in advance being that I'm working all Sunday on our kiddies' recital. Hmmm.
I don't know what you make but recently I ran across rawvolutions taco meat made with walnuts that you wrap in lettuce leafs. It is fabulous! I also like the refried beans recipe that Rawkinlocs posted on this site. Make some homemade salsa and gaucamole and you have Mexican night!

Ooh, Mexican is quite yummy! I haven't tried either of those yet only read about them. The nuts I've found I can eat are: pine nuts, almonds, pecans, and all seeds. The rest I am most likely still allergic to.
Could I use almonds instead of walnuts, do you think?

I can't say for sure (since I'm allergic to pecans) but that would be my best guess for a replacement in the walnut taco meat.... if I remember correctly, they have a similar kind of texture. Let us know if it works!
The re-fried beans uses sunflower seeds, perhaps try that one.

My new kick is a green papaya salad. I also love love love the pizza made with calzone as crust.

If pine nuts are okay, you may want to try the raw spanish paella with oyster mushrooms recipe that is floating around on this board. Just use the search engine and type in spanish rice ~ Cathy
