I found some Eddoes in the supermarket today. I've not used them before but as I've been looking for jicama to make fries and haven't found any, I thought using a different root veg would be a substitute.

Anyway I've just done a google search and found 3 sites saying that you can't eat them raw because they will burn your mouth due to calcium oxilate crystals in them.

Well before I read that, I ate a couple of small pieces. It didn't taste that great, but it didn't burn my mouth.

I'm not sure what the problem is with calcium oxilate crystals - are they dangerous to the body?

So, what should I do? Do you think I should throw them away or eat them anyway?

hi, i have seen eddoes but not tried them yet, i did a search and found this:

Eddoes are small root vegetables, a variety of Taro. They offer an intensely flavourful alternative to standard potatoes, sweet potatoes and yams and can be prepared and eaten in much the same way.

Don’t be put off by their appearance, as after removing the rough brown skin with a peeler they can be easily prepared. Once cooked they have a sweet, subtle, nutty flavour and are delicious mashed with milk, butter and a little grated nutmeg. They are also a great blend in soups and can be fried to make tasty fritters.

Eddoes are versatile vegetables and are also perfect for baking, chipping or roasting.

... so if they are similar to sweet poatoes, i suppose its ok to make crisps out of them in the dehydrater etc...

regarding the crystals i found :

be mindful that taro leaves contain calcium oxilate crystals that can cause mild stinging in you mouth and throat. this says its in the leaves?

hopefully someone here has better and more accurate info...

p.s. I also have just seen on one or two sites it says don't eat it raw... maybe best not to until someone else who knows can answer....

It's like a yam were Portuguese so my family makes these often. They are soft when cooked. Unsure about raw?
