View Full Version : Tips on softening veggies in dehydrator?

Hi everyone...

I'm into my 2nd month of 100% raw, but I'm struggling with being a little bored with the same foods... I want to convert some of my favorite Thai and Indian recipes to raw, but would like some tips on softening veggies in the dehydrator without having to marinate in excessive amounts of salty nama shoyu, etc.

I'm especially wanting to use eggplant and some winter squashes to make curries. Has anyone had success dehydrating veggies to a soft, tender state without having to add too much salty substances to draw the moisture out?

I'd appreciate any advice/tips... I am *so* craving Thai and Indian right now and want to convert some recipes so I stay raw and don't go koo koo... :D

I usually toss veggies lightly in olive oil and sea salt then dehydrate. I only add nama shoyu for a different flavor.

Hi Mary,

I sometimes will soak my veggies in water with a little salt first for a few hours, then dehydrate them until they get really soft. Hope this helps and let us know what works for you.

soaking them in just plain old warm water is good

if you are going for a marianted type of veggie then you just use some olive oil and place them in a plastic baggie(optional) in the dehydrator for a bit; the oil and the spices will easily turn your veggies into marinated veggies in the dehydrator...

Thank you, everyone, for the tips! I have some broccoli rabe that I'm growing in my garden, and it's ready to harvest today! I'll try soaking it in a little lightly salted water, then toss with olive oil and dehydrate. Wish me luck! ;)

let me know how it turns out for you mary, that is one of the veggies that i miss eating and just do not like raw... i used to steam it for two minutes or even less than that in boiling water (just to soften it but keep the crunch; but i haven't eaten it since doing raw
