I put this thread up on the "juicing" forum....but I really haven't gotten the response I'm looking for.
I have an Omega 8005, and I CAN make nut butter from it. Problem is, it comes out very dry...and hard. I am using soaked dehydrated almonds. Will NOT dehydrating them make that much of a difference???
Has anyone else used their Omega 8805 for making their nut butter? I don't want to use my FP because it is SOOO big, and I usually only make alittle at a time, perfect for running alittle through my juicer.
Any tips are GREATLY appreciated. I love raw nut butter...and taking a small jar camping would be a great treat. (going camping AGAIN this weekend, with my kids this time!!)

I have an Omea 8005, and have to say that I was not happy with the way it "makes" nut butter..LOL.. I did not dehydrate mine (almonds), and put them through probably 8 times..and still, it was not "buttery." It was a very thick pasty ball and I mixed it with maple syrup to put on my bananas and strawberries.
I have read to add oil to it, which I guess would work. I only had olive and hemp oil and did not want to ruin the flavor. I think the next time, I will put it through the juicer, then put it in the fp with some macadamia nut oil maybe..lol.. (that is expensive) but, with a price of about 18 dollars a jar for raw almond butter, it still might be better to make it myself.

I'm not 100% sure of this, but I believe the makers of nut butters go out of their way to get nuts that are high in oil content, and these are not the standard nuts you would buy as just nuts. I get frustrated making nut butters too becuase the results are somewhat random. I noticed when my Whole Foods ran out of their almonds in their almond butter grinders, they posted a sign saying that their supplier of butter nuts was out. I thought the fact that they said "butter nuts" was telling, because when I buy raw almonds at Whole Foods, I can't make almond butter out of it the way theirs comes out of the machine.

SOOO frustrating. I don't know if I will ever make enough at one time to get it to "turn" in the FP! I've even tried making it, and crumbling the hard "tubes" you get from the juicer, and then adding some water and oil ....and sweetner, but it didn't get creamy. Maybe I need to bite the bullet and make MORE, put it in the FP, and see what happens. Thanks for the help. Maybe someone else has another idea. Maybe adding oil will help to cream it in the FP.

Hello Wendi,
I use my Omega quite often for nut butter, usually soaked then dehydrated nuts. I've tried making macadamia butter w/great result. I think the fat content has to be high to get the texture you are looking for. I also made almond butter, sesame seed butter, cashew butter, and I love them, but I think the texture is not as creamy.
Have you tried running through the juice a few times?

did you use unhulled or hulled sesame seeds? I have some unhulled one and might give it a try. I also have a bunch of macs that I need to use. I bought them a while back in bulk, and think they might be starting to go..LOL..

....I don't know about the Omega, but I have decent results with the Champion, for nut butters. I find I do need to add oil to almond butter....I used vegetable, since using Olive Oil just didn't appeal to me....I read that you can use coconut oil, which I will use next time. Walnuts need very little added oil and make a good nut butter....when I've tried water, it seems to only make it pasty and thick, not real creamy....good luck! Deb

I have a greenstar and it didn't come out good at all. I was so disappointed. I will try adding coconut oil.

I just put it in the Omega juicer. That's it. It comes out as nut butter. Do you have a juicer?
I never soak or dehydrate nuts used to make butter. Please do not add water unless you intend to eat it within two or three days. It will spoil very fast after having water added. A very good pastry dough can be made though by adding some water and processing absolutely smooth.
If any of you have a FP even a small one, just take the ground nuts and process them until the oil is released. I have made nut butters in a coffee grinder, a food processor, and a Vitamix. It takes the shortest time in the coffee grinder and makes only a very small amount.
With the food processor alone it takes maybe 15 min of grind and stop, grind and stop, grind and stop ... the point is to keep the processor and the maker's temper from getting hot. It is doable though and I did it many times.
With the Vitamix, the nuts become powder almost instantly. To make butter without adding anything else the ground nuts can be transferred to a processor to beat the oil out of them, no pulsing needed. There will become a ball in the processor then spread out as butter. Or they can be left in the Vitamix and pulsed while pushing them into the blades. This cannot be one continuously. The machine must be pulsed in order not to overheat the motor.
For those using a juicer, I'd probably transfer it to a processor.

Thanks for that info on putting the macadamias in a juicer. I do have one. Have had it for a couple of months and have never used it. Now i can. I dont do juice and believe that the whole veggie/fruit is better for me made into a smoothie.
Doe. Thanks for your info also. Everything helps. I dont even have a blender. Mine burned up this morn so tired to make a smoothie in the FP. Well i got to say that i had to much in it and so it did not have a chance to get very smooth as it started to run out when being blended. I guess i have to break down and buy a new blender. I just have a hard time spending a couple of hundred dollars on a good one. Maybe i will just get the best i can at a local store and use it until i can save up for a real good one.
