I am the princess of cheap and I know from doing my own research that green peppers have way less nutrients than their colored relatives. As green peppers are picked before they are ripe (but all you seasoned raws raws prob already know that). So I put a table in front of my window (and of course I am CHEAP, so I buy mostly green peppers and only a select few colored ones if they are large) and let the green ones sun bathe for a couple days until they turn yellow. Just wondering if they gain extra nutrients or if I am just fooled by the color transformation???
