I finally tried fresh corn on the cob, and WOW - I'm in love! I held off on trying it because I was *sure* I was going to be disappointed. I loved cooked corn on the cob SO much, that I just *knew* something would be lost without the grill, the loads of butter, and the salt. It was SO much better then any ear of cooked I've ever eaten. So sweet and juicy. YUM! My new favorite veggie!

It's a buttery flavour with a mild nut overtone. Just like regular macadamias. Buttery, rich goodness :)

It's expensive, but, it's the one thing I can't live without on raw!

Not only is it insanely delicious (especially with salt and lime juice with kale) but, it supposedly increases metabolism and helps the body burn fat.

I am seriously in love with the stuff! I can't believe I doubted how good it would be. I've been missing out all this time :p I lived in Iowa for a while as a kid, and I helped in the corn fields. Had I known how tasty this little treasure truly is, I'm sure I would have eaten up all of our profits! lol.

My favorite raw corn recipe

Corn Salad with Cilantro Dressing

Salad:
4 fresh Corn Cobs, stripped
1 diced Red Bell Pepper
1 Avocado, cubed

Dressing:
1 minced Garlic
1 small Onion
½ Jalapeno Pepper
1 small bunch Cilantro
1 Lime, juiced
½ tsp Sea Salt (or to taste)
2 tsp Flax or Olive Oil
½ tsp Cumin Powder

In a medium bowl, combine the corn, red bell pepper & avocado. Set aside. In a blender, Vita-Mix or food processor, combine the dressing ingredients. Pulse until the cilantro is finely chopped. Mix the dressing with the salad. Enjoy!
