Hi, I was wondering why it's so important to be 100% raw vs 95-99%. I'm NOT talking about the craving door staying open here either. If that's all it is, then I can handle being 95-100% raw forever. I mean compared to the SAD, or even a cooked vegan diet, isn't 99% raw a pretty darn healthy diet? I mean for example, I'm trying to eat 100% raw, but have heard or read that Braggs liquid aminos is heated, that cashews are not truly raw, that nama shoyu is cooked, and other supposed "raw" ingredients I've found in cookbooks aren't really raw. Is that the 1% that we're talking about here? I'm confused. And also, has anyone wathced Lorraine Day's videos like "Cancer Doesn't Scare Me Anymore"? She mentions that she cured her advanced cancer eating I think like 75% raw and ate cooked potatoes and high quality bread. What are everyone's thoughts? Thanks, Nicole

I don't know first hand about this. I do remember reading in one of Victoria Boutenkos books that cooked food creates a mucous response in the body..and since our organs and digestive system become coated with mucous for their own protection ( from toxins etc), we assimilate less nutrients.

When we eat 100 percent raw we dont create mucous to protect our organs from our food, and so we assimilate way more nutrients.
I think the chart compared 99% raw-assimilation 3% of nutrients, whereas 100% raw-assimilation 30% of nutrients.

So perhaps that is one important benefit to 100 %. As I said though-I only read this!! ( in 12 Steps to Raw by Victoria Boutenko)
