I hate to admit it, but every time I have spiralized zucchini and eaten it with any type of sauce, it's made me feel kind of sick and gross. Kind of like it foams up in my stomach afterward or something. I was wondering if anyone had some delicious ideas for something to do with zucchini besides spiralize it. I could make dehydrated chips out of it, but I was thinking more along the lines of eating it fresh.

Can you grate it?
Or marinade it?
I love making the all-veggie wraps with it...
I eat zucchini all the time and don't have a spiral-thingy. I have 2 dishes that I make quite often. Both use just a veggie peeler. I first peel the skin off. Then I peel the zucchini into long thick strips. Once you have sliced the whole zucchini you can either cut the strips the long way for a linguine-type noodle or my favorite, I chop the zucchini the short way into 1/2"-1" pieces and make a lasagna-type dish.
For my lasagna-type dish, I line the bottom of a bowl with the zucchini pieces overlapping them a bit. After the bottom is covered and a bit of the side I put in a "meat" layer usually made with walnuts. I then add another zucchini layer, again overlapping and then put a cheeze layer. Again... a zuchhini layer, then a tomato sauce layer. You can either eat as is or stick in the dehydrator for a few hours.
FYI: I chop the zucchini into bite size pieces to make it easier to eat. When I tried to make the "lasagna" recipe I found it hard to eat when the zucchini was left as long strips.
For the linguine (not recommended for the lasagna), if you want to make the zucchini more noodle-like, put the "noodles" in a colander and sprinkle some salt on it and massage for a bit. Make sure there is something under the colander to collect the zucchini juice. Let it sit for 5-10 minutes... the salt will soften up the zucchini.

I love it in wraps too.
Or just marinated in olive oile with garlic and oreagano, served room temp.

I just finished eating zuke in sticks I used to dip with. Also, it's become one of my favorite bases for a dip.

I have had it a few times, even bought a saladaco just to make it.
makes me feel kinda sick.....glad I am not the only one. well not glad that it makes YOU sick...LOL but that it isn't just me....if that makes sense!

We went for Thai on mother's day and I asked the chef to make me something "raw-ish."
I had a nice salad and the main dish was spiralized (!) zucchini in an awesome coconut curry sauce with diced vegetables. It was really good and the first thing that made me want to go buy a spiralizer.
I was never interested in the faux spaghetti/marinara sauce recipes, as I prefer inventing new things rather than reproducing SAD ones. This goes back to being a vegan in High School and hating the TVP laden chinese places my friends dragged me to :D
I'm going to get some ingredients and go about making this myself. If you'd like, I can mail you the recipe once I get it right :p
