I had a "happy accident" this weekend with some plantains when what I thought was a recipe disaster turned into a crunchy, yummy plantain chip. Here's what I did ...
2 ripe plantains (they are rip when they are soft and mostly black on the outised). Cut into thin cirlces, or dice in to small chuncks. Put in a bowl and cover with water and also add a 1/2 tablespoon of salt. Let sit 3-4 hours. The plantains should become very soft and soak up a lot of the water. At this point drain the water off.
The plantains should be soft enough to easily mash with a fork, or you could quickly process in a fp if you wanted. Now add whatever seasoning you want. If want a savory ship add garlic & onion powder. You could do sweet w/ some agave. Now spread a thin layer onto a teflex sheet and dehydrate for 8 hrs on one side. Flip & dehydrate 6 more on the other side. At this point you can cut or break them into pieces. They will probably still feel kind of soft, but once they hit the air they turn super crunchy.
I made mine into chips & ate them w/ salsa. Yummy !
