David wolfe - Naked Chocolate;) Raw cocao is raw uncooked. If your worried about it , only buy it from the company David uses, he personally works with them to make sure its raw. You can buy it off his website.:D http://www.youtube.com/watch?v=-xzKfI3HIuI

LL I don't have Davids book on me right now or I would look it up, I remember it saying how. I love that book and loan it out to sooo many non raw fooders. Maybe someone else on here could look at theirs and post it. I wouldn't worry though;) I believe David is very carefull about his products.

* It is pretty tough to "peel" the raw beans by hand. I soak them first a few hours.

I buy Alissa's raw cacao powder. It is amazing. I've had the same bag for 6 months so you don't need a lot...I rarely use it, but when I do, it causes no problems. They used to say I was allergic to chocolate, but commercial chocolate has dairy, additives, wax, etc. Perhaps, I was allergic to those 'extras'.
Also, you can buy raw cacao nibs without the shells. David Wolfe and maybe Alissa (sorry, I forget) sells them without the shells. I really like supporting Alissa's store though..since it's her message board ;)
