This may be a dumb question..but..I love corn..and I just am not sure how it would taste or of the texture without cooking it..I used to put it on my salads when it was available at a salad bar..but I'm assuming it was cooked first then refrigerated..what kind of recipes does everyone like to put corn in here?..and does anyone know how u could make a realy good raw creamed corn?..also..do u just buy corn on the cob and then scrape it off or do u buy frozen (which I'm not sure is even raw)?..thanx for everyones help

I made Alissa's potato salad and the corn was delish. I add it to salads now. Its really really good raw.

I'm new to raw corn, and I adore it. It's amazing. I buy the corn on the cob and scrape it off. Not too difficult (although it can make a mess if you aren't careful).
I put it on my salads. I haven't made anything else with it, but I'm planning on making some corn dehydrator chips later on today.
As for raw creamed corn, if you don't mind the color, maybe you could blend it up with some avacado for the creaminess. I don't know. Good question.

Buy it on the cob, scrape it off. Alissa has a corn chowder in her book which I think is GREAT! You can also eat it on the cob with some umeboshi plum paste on it (probably not raw but a living food methinks). Tastes like butter and salt. Add it to a succotash or whatever that mix is called. :p
Alissa also has a corn chip recipe in her book.

I'm puzzled about corn in general. My mother always said corn is bad for humans. Anyone have data to refute or prove this?

I love raw corn and eat it in the summer mostly. I just scrape it off the cob onto salads, or add it on top of gazpacho, or you can make corn chowder with almond milk and avocado and some other ingrediants (I think there is a recipe for it in Alissa's book). I always add salt & pepper to the raw corn, just tastes better that way, it's kind of bland without it.:)

Oh, you have not LIVED until you've eaten corn right off the plant.
Right off the plant is important, so if you live in a farming community, try buying it at the fruit stand.
Frozen organic corn is best for tortillas, for some reason.
Most corn you buy today is GE corn and your mom is right, it's horrible for humans and some people (like myself) don't do well with corn. If I eat too much, like wheat, my joints swell up and ache. But once or twice a month and maybe more during season doesn't seem to bother me. And organic corn in season is not something I'm willing to give up.

That corn chowder recipe sounds great. Next time they have a stand at Whole Foods, I'm going to buy some and break out my raw food books to experiment. I think I may even have to go hijack my mom's dehydrator and make some of those "Rawritos" and salsa :eek: :D

In the china study it makes reference to a toxin (aflotoxin I think) that is present in mouldy corn and peanuts. If its fresh I think its fine, just inspect it carefully...

Here is what I've found about corn..and I've heard that same thing about corn not having much value..but I thik it just got a bad wrap like cucumbers...
now this is for cooked corn..so I'm sure Raw it's even better..
One ear, cooked with no salt contains 2.6 grams protein and 2.1 grams fiber.
Potassium - 191.7 mg
Phosphorus - 79.3 mg
Magnesium - 24.6 mg
Sodium - 13 mg
Calcium - 1.5 mg
selenium - .6 mg
Iron - .5 mg
Zinc - .4 mg
Also contains small amounts of manganese and copper.
Vitamin C - 4.8 mg
Vitamin A - 167 IU
Niacin - 1.2 mg
Folate - 27.3 mcg
Pantothenic Acid - .68 mg
Contains some other vitamins in small amounts.

I had corn on the cob for dinner last night. Just ate it right off the cob and it was devine!!
For creamed corn, I agree - start with Alissa's chowder recipe (yum)... made increase the avacado ingredient to make it a little thicker/creamier? And/or less almond milk? And shave some fresh kernels into the mix for that lumpy taste?

We just can't digest corn all the way. So you get a bit more roughage.

I love corn. But I was told by a friend from France that they don't eat it there. That the corn there is hard and not edible - it is only fed to animals. He claimed the corn we have here is genetically modified to be edible. I haven't verified this though. I think I'll still eat it on ocassion when it's in season. I think it's yummier raw. I read somewhere to rub some avocado on it instead of butter. I still need to try that.

Boy, that puts a funny image in my mind.
I can see myself sneaking through a corn field, finding a attractive looking stalk and gently carresing the ear as I peel down the husk and push aside the silk.
When I'm finished, all that remains is a gnawed up corncob, pointing skywards, waving softly in the wind.
Wow. I've gotta get myself some corn.
Anyway, long before going raw, I discovered the joy of raw corn. I don't even bother with cutting it off...I just eat it right off the cob. My mouth is watering just thinking about it! Can't wait 'til corn season!

I never had raw corn until last year, but I sure ate a lot of stuff from the garden right from the plant. Peas were a favorite, pod and all. And nothing beats a strawberry or tomato, still warm from the sun. Since I only have Earthboxes it wouldn't make a lot of sense for me to plant corn.

I never much liked corn until I tried it raw. I could eat it and it didn't really bother me. Unless it was on the cob. Yuck! Sticks in your teeth. I guess my main problem with it was the way it was so doctored up when cooked. All that butter and salt and too often it wasn't fresh so people added sugar to make it sweeter. :eek:
Then I tried it raw. Yummy! Daughter likes hers straight from the cob. I just cut it off with a knife. I use my big flat pasta serving bowl so there's no mess.
I've made corn salad, adding cilantro, tomatoes, celery, onions, lime juice, etc. That was good. But really I prefer just a big pile of corn with a touch of salt. Mmmm...

I've tried it on the cob with avocado and salt and it is indeed great. Need to test coconut oil (in the solid state) instead of avo, as I've found that very butter-like on crackers and bread.
