Can artichokes or theyre hearts be eaten raw???

Sure ain't gonna be me without some pretty powerful marinade for that baby.

About as appealing as trying to pet a porcupine, I'd say.

weelll I dared myself -my mom bought them a while back and wasnt going to use them-shes busier than she thinks,lol, so I took that dare and pulled all of the leaves out down to the heart and tried a small leaf -it was tough and nasty -lol I SPIT IT OUT IMMEDIATLEY!!!!

Maybe the hearts of the artichoke are okay? Yes, I would imagine the leaves are pretty tough. Next time I go to the store, I will buy an artichoke and cut it all up, take the heart of it out and do some tasting.

you can try ,but Imust warn you the heart is pretty inedible

I haven't tried artichokes raw, but wondering if maybe taking the artichoke heart and adding it to a few other raw veggies and putting it all into the blender for a raw soup or a dip might work?

I'll have to give this a try. . .

yeah, or what about marinating them for long time in oil/vinegar/spice marinade? like in the jars, without the cooking. i do so love artichokes. i just find it hard to believe that a loving God would make artichokes so darned yummy if they were not meant to be eaten somehow :confused:

possibly ve ,like a pickle or something??? the dip idea might work also..they are so yummy in the jars....mmmm :::::mouth is watering:::::

Well, I went out and bought an artichoke. I cut off the leaves, scraped out the choke and then cut the heart in two. One half is marinating in some olive oil and salt. The other half I threw in the food processor and made a carrot, avocado dip with a little parsley thrown in. You could barely taste the artichoke, but it was good.

So, it is edible raw! It was a lot of work though, just to get a little bit of edible raw! Once the other half has hopefully softened a little from the oil, I will get back and report.
