I have a little obsession with pizza these days. I usually top it with mozarella cheese made with cashews. Today I tried the rich cheddar cheese made with sunflower seeds. The cheese didn't turn out as well as last time I made it though. I think I like the mozarella best so far (its from Alissa's book), but I'm still searching for the best one. What is your favorite cheese to put on top? Thanks!

So you just put the marinara sauce on and you're good to go? I might like that actually...I'm obsessed with marinara lately. It's soooo good. I love putting the leftovers on a big bowl of greens after I make the pizza.

I was JUST thinking of posting a pizza cheese thread while I was cleaning my dehydrator trays - WIERD! That law of attraction sometimes, I swear!
I make taco pizza cheese, a tangy one for an herbed pizza, a plain one and a pesto one.
I NEVER measure anymore, so bear with me....this is going to be a bit loose, but I think you can work with it, simple as it is.
Plain Pizza Cheeze
Sprouted Sunflower Seeds (note: use 1/2 or all cashews, even, for richness!)
Braggs (note: Sea Salt can be subbed ;-)
Nutritional Yeast (a few Tbsps)
1 - 2 Cloves Garlic (to taste)
Water - as needed
Blend until creamy in Vitamix
Taco Pizza Cheeze
Plain Pizza Cheese
Add Taco Seasoning . . . .
For the Pesto Cheeze, I take some of my favorite pesto, and add sprouted sunflower seeds (or, you could use cashews, once again) and add a few Tbsp nutritional yeast.
For the Tangy Cheeze, I take my favorite "Goddessy" salad dressing and add Nutritional Yeast and some Sprouted Sunflower or Cashews (I switched from cashews to SF and nobody noticed, it's cheaper but much HEALTHIER)
SOME also use the Cheddar Cheese Spread, which is good, too, and would work well and add some great color. The recipe is on this board:
Rich Cheddar Sauce
Adapted from "Rejuvenate Your Life" by Serene Allison
1/2 large red bell pepper
¼ c water
1 c raw cashews, sunflower seeds, or almonds
1 T tahini
2 T nutritional yeast
1 ½ teaspoon sea salt
2 teaspoons onion powder (or a small slice of onion or 1 tbs or so of green onions)
1 clove garlic
2 T lemon juice
Blend until creamy. Add more water if it is too thick.

p.s. Now that I'm not afraid of miso anymore, it tastes ridiculously cheezy to me and I want to experiment with it. :-)

I love tahini, nutritional yeast, water (salt & lemon juice optional). Just mix it together.
Another really good one that I use is cashews, nutritional yeast, onion and red pepper blended together. Add salt if you want. This one is soooo good!

Thanks guys...now I have a lot of experimenting to do. Guess I'll have to eat more pizza in the name of science.
