I posted this under another thread but didn't want it to get lost as it is SO good!
This tuna salad has been in my fridge every week for years!!!
hubby takes it to work in sammiches & 3 year old has been eating it since she could say it (we call it foonie)
the closest thing to the real stuff i have found. We have taken it to family pot lucks & everyone asked for he recipe...we used it for a dip w/ crackers.
GREAT IN SUSHI rolls w/ avo & red bell!!!
Soak 1-Cup Almonds overnight.
rinse, drain & pulse in processor til fine.
then add to processor~
1 large or 2 small stalks of celery
1-2 green onions (depending on size/taste)
approx 1/4 cup italian parsley (not chopped)
1T + an extra splash of lemon juice
dash cayenne/fresh black pepper
1/2-3/4 t. salt
1/2 t. garlic granuals
approx 1/3 cup dulse(NOT flakes...the dried whole kind)
1/8-1/4 cup water.
ADD THE WATER A LITTLE AT A TIME to your desired consistancy.
Pulse until all is combined and chopped well scraping from bottom 1 or 2 times.
i don't use fresh garlic because it becomes overpowering and strong.
I also add to the recipe...for my own tastes~
1/2 t dried mustard
one small bubbies pickle

note taken :p
I loves me some tuna.
I have been dreaming about trying to make tuna...hopefully this will satisfy. Garlic granuals? is that like dried? or that stuff that is in the jar?

Tori,
Try carrot pulp, too, for tuna. I use the pulp after I make juice, add raw mayo and chopped up celery, and it's rawesome! :)

Hmm...what kind of mayo do you suggest? I have carrot pulp in the freezer...do you add any dulse to make it 'fishy?'

I used to eat tuna way back in the day and every now and then I have a desire for something like tuna on a cracker. I am going to give this a try. Thanks for sharing... I'm making a list of recipes to try in June.
What's a "bubbies pickle"?

Can you tell me how much that yields, about?

I made Alissa's Mock Salmon Pate because someone posted that it tasted like tuna. It was pretty good, but did not taste like tuna. I have never ate salmon so I cannot compare it to that.

I'm sorry, I think that was me who said that. It's funny how we all taste differently, it doesn't remind me of salmon, it reminds me of tuna. But I bet anm actualy raw tuna recipe tastes MORE like it. I hope you enjoyed it anyways. :o

to answer all the questions at once....garlic granuals is dried garlic,like the kind in the spice section.
honestly it is the closest thing to tuna salad i have ever tried.....when vegan I had "tuno"...SO nasty to me.
the texture is a bit smooshier but the flavor is really yummy.
it yields approx 2 cups....i *think*...but for some reason it seems to "fluff up" after being in the fridge. i am making some tomorrow...i will measure.
this is actually a HALVED recipe. and adapted a bit. the full recipe made SO much!
A "bubbies" pickle are pickles in the fridge section at my Whole Foods ;)
they are naturally fermented with no vinegar and NOT cooked! raw pickles.
make the same way as kraut. Bubbies makes the best kraut too!

I liked the salmon pate so it was not a waste to make. I needed to add some good fats so it gave me a break from avocado based food. I am going to try to make the tuna recipe very soon.

Damzlfly,
I don't make it fishy, but you can do that by soaking wakame or adding dulse, sure. The consistency using carrot pulp is really spot on (not sure if it would be the same using frozen, but I don't see why not!). I use this recipe for mayo:
Blend until smooth:
* ½ c almonds, soaked and peeled
* 1/4 cup water
* ½ lemon, juiced
* 1 small garlic clove
* ½ tsp salt
Add in a steady stream, until emulsified:
* ½ c olive oil (add more if to your taste, but I think this works!)

Damn I forgot to soak the almonds! I have cashews I soaked last night that are in the D right now...can I use those instead? I can't see them being dried by the time I get home (3 more hrs - total 6 hrs in the D)

I also miss tuna! I am not good so far at making any of these recipies.:mad:
I either forget to soak nuts or soak too much and end up tossing them out. lol
I don't know what dulse is. I don't have and can't afford alot of the exotic ingredients and what not.I am a tad frustrated. I am craving cooked right now. I would love to try tuna. I would love to try the crackers. I don't have a dehydrator either. :mad: I wish someone could send me some. lol
You guys are awesome for knowing how to make all that yummy stuff.

Making this tonight for my sister who loved it when I made it back in May. The last time I forgot all about soaking the nuts and we still loved it - crunchy tuna and all. I'm about to soak the nuts right now and then I'll be making it tomorrow!!

Dulse is a seaweed sold at Asian markets more in their whole dried form and you can break up pieces and grind to a powder. Also sold at health food stores in powder and even in smaller packages dried too. It's usually in smaller packages than Asian markets. A little goes a long way.
May google its benefits. I love the red kind but having problems finding here. I know Maine Coastal think called sells seaweeds of various kinds.

Bubbies pickles no problem finding at WF refrigerated area. Here probably at every WF (Denver, CO area).

Just a tip about the garlic, it probably looses most of it's benefits when processed into powder/granules and garlic is one of the healthiest foods. Try using frehs garlic but putting less, or some say to remove the vein but that's where most benefits come from.

I have almonds soaking for this right now.
It will be my first "raw recipe," meaning a recipe I got from somewhere else that I actually followed and was written to be raw.
I don't have "big dulse," only the tiny flakes.
I do have nori and wakame, as well as tiny flakes of kelp... I may experiment with wakame and dulse in this unless someone warns me first that it absolutely won't work.
I'm excited!
We'll see what happens!

OK, I made it and it's fabulous.
It didn't have enough "sea" flavor for me, probably since I improvised on the seaweed part, so I wrapped it up in nori and made a sushi roll with carrot, avocado, tahini, and spinach leaves and WOW.
I was already getting full just from tasting it while making it - it's so filling! That didn't stop me from eating 2 pieces of sushi, though. *lol*
I will be eating that one sushi roll 'til this afternoon, I'm sure.
Thanks for the recipe! It's a keeper!
edit:
Scratch my eating the sushi roll all morning - I went back in the kitchen and the kids were devouring the rest of it!

Tiny flakes dulse works great too. Actually easier than trying to chop or grind later pieces anyway. Glad you all loved it.

I searched this one out because it is the only tuna recipe that really tastes like tuna and that my non raw-vegan friends enjoy. Can't wait to have this later.
