I read on line that this is a squash like veggie. Any ideas what to do with it?

I marinated mine in olive oil, garlic, onion and celtic salt or braggs, sliced and then mixed it with a nut pate on a bed of lettuce - oh yea and jalepeno pepper minced and tomato

I have a few questions about this. I've made these before as cooked, adding cinnamon and sweetener and they tasted like apples. However all the references I see for them say they taste like a cross between zucchini and cucumber. I'm also confused about the peeling. Some sources say they don't need to be peeled unless the peel is thick. Other sources say they always need to be peeled.

And regarding the peel... Some sources say there is a sticky substance under the peel that can burn or irritate your skin if it gets on it. They say to peel them under running water. As I recall, they did seem to ooze a very sticky, very slippery substance when I tried to peel them. I did try to peel one under running water but couldn't keep a grip on it. I suppose I could wear rubber gloves, but that would mean buying a clean pair. The only ones I have are old and have been used with cleaners. Does anyone know any tricks for peeling them? As I recall, the sticky stuff stayed on my hands for a couple of days and it was indeed irritating. Makes me wonder how you can eat the stuff and not get the irritation in your mouth and other places.

Can this stuff be eaten without dressing on it? I don't normally like dressing on my veggies. I do know that these are mild tasting and will pick up flavors of foods around them so you're not suppose to store them for long in the fridge.

I just diced mine up and put it in a salad ... it tasted fine and didn't bother me ... it seemed like it had an "apple" consistency. I did not peel it.
