Hi Everyone!

I am wondering if anyone has a solution for peeling that dark brown, touch surface off of raw coconut...you know, after you get it out of the shell? For storage, I am sure everyone will probably say put it in the dehydrator and dry it out. But I don't have a dehydrator yet, so I would love some feedback regarding how to store it, how long it will last, etc.

For now, I cut it into chunks with the skin on and ground it in my coffee grinder. It actually worked very well. Made it into quite a fine shred. And for now, I am just storing it in a ziploc bag in the fridge.

Thanks for any ideas you might have!

Can u peel with a potato peeler? I was wondering if the brown part is still kind of tough even after u chopped it up. I am sure that the brown part is ok to eat as I know i have eaten it already but it always seemed more like chewing wood.....not that i chew on wood aside of a toothpick once in a while.
I dont know bout storage. Prob freeze it. It is what i would do as it goes bad in frig after a while.

Are you talking about young coconuts or mature coconuts? When I pop the meat out of a young coconut shell, there's usually not too much husk on it. But if there is, I use a tiny little boning knife and just slice it off in a thin layer. I'm not sure why you'd want to store the husk--is that what you meant? But if you're talking about storing coconut meat, I'd use it fresh! What do you mean by "skin on?"

Hi RawVee!

Sorry for the confusion. I was talking about mature coconuts and not storing the husk, but the flesh. I wanted to know if there is an easier way to get the husk off than to slice it, or if maybe soaking it would soften it at all, kind of like blanching almonds. Once the husk is removed, I was wondering the best way to store any unused portions of the shredded flesh. Thanks!

Hi PuffysMom!

I was using a paring knife and even with that it is very difficult to get the husk off of the flesh. Once shredded, it seems to mix in fine with the flesh, but it's hard on the blades of my coffee grinder, so I would like to find another solution. Plus, the coconut you purchase at the store doesn't have the brown husk, so I wonder how they remove it? Probably blanch in hot water, I'll bet, to soften/loosen. I agree, it does go bad in the fridge. Thanks!
