Lemon Berry Smoothie - sorry, no pictures yet.

OK, so I've made it again and am now modifying the recipe. I think I may have just died and entered heaven! :D

1 1/2 C water (today I used almond/Brazil nut milk instead)
2 C blueberries (I used frozen)
3 small lemons, juiced (plus 1/4 of a whole lemon, seeded)
3 T raw coconut, or coconut powder
2 T honey or agave nectar (I used honey)
3 dates (pitted - soaked or unsoaked) optional

Put it all in a Vita Mix or high-powered blender and let it rip! "WOW," is all I can say. I drank the whole thing for breakfast. Talk about some fiber!! :eek:

I'm not sure what it is about the lemon and the blueberry combo - but it is just such a perfect fit. And the coconut on top of that smoothes out all the wrinkles in between. Hmmmmmmm..........

Oh good! I have so many wrinkles in between that I need smoothin' out. I'm gonna try this. The coconut will just sit on my hair spikes, so that'll work! Thanks Anna!!! :p

Where do you get coconut powder??? Would this be like dried coconut flakes ran through my coffee grinder, but not turned into a butter??? I really want to try more coconut recipes, but I am almost tempted to buy jarred coconut creme or something in place of the young coconut meat because every young coconut I've opened is bad:( What would be a good substitute?? Thanks...Anna, your recipes are ...well...there's no word. I love everything of yours that I've tried. I'm making some chocolate chewies and some cinnamon macaroons to take camping in a few weeks. One question about those...what "tip" is a good sizeand kind to use to make the cookies pretty like the ones in your picture?? I'm off to the store tomorrow, and Walmart has a Wilton section. I used to decorate cakes and have some tips, but don't think I have the right size for the cookies. I'm alittle rusty in remembering all the tips, but I'm slowly pulling them out, looking for what I can use for all my raw goodies... Thanks...again.

I received my coconut powder as a sample that came with an order I placed. I must say, it does some in handy. I've used it in soups and smoothies and desserts too. The package says "Ultimate Raw Foods - organic coconut cream powder." Hope this helps. It's really good stuff.

As far as a tip goes, you would know more than I. I just used this simple wilton piping tip - the really big one that has a type of star burst on the bottom. I just hold the tip just above the teflex sheet and push the mixture out until it is the size I want - then I gently pull it away. Sorry I can't tell you more or give you numbers/sizes. I don't really know what it's called.

You know, I haven't made time to pop in here in a little while, and I've been thinking this past week how I reallllly need to find some new smoothie recipes. And I decide to pop in tonight and find this. My daughter LOVES blueberries and Mom (that's me, LOL!) LOVES lemon and coconut. Me thinks this just might work out really great. ;)

I've made it again today and changed the recipe above - much for the better! It reminds me of a blueberry lemon cream tart - I may just drink this all day!!

My husband wants it for dinner too... ahhhhh....can't wait.....I'm a sucker for tasty treats made with berries.

It was sent as a "gift." I wasn't sure what to do with it when I first got it, but now I sure do...

It was from a company called Ultimate Raw Foods. I understand Alissa sells it also.

I've also used fresh coconut and that works really niced also. I used the flesh of one Thai coconut.

Sippin' on this right now. I made a few changes though...
I made mine a green smoothie!

1 C almond milk (that's all I had made)
1 C water
2 C blueberries (I used frozen)
3 lemons, juiced
3 T coconut powder (mine were heaping)
2 T agave nectar
2 handfuls of organic baby spinach

YUM!

Thanks Anna for the recipe... this is definitely a KEEPER!

I have never purchased from here but I did a search for the coconut creme powder and although almost all stores seem to be out this looks to be instock (at least it doesn't say sold out!)

I made this last week and it is SO good! Now that blueberries are in season here on the East Coast - WHOA!!! I love this combination! And what a nice touch the coconut powder adds to it!
This is really, really good. Very refreshing!

Geez, when maraw says you must try this, yummy, you KNOW it must be awesome because you just throw a dart at maraw's recipes and whichever it hits is outstanding.

Now this sounds like tangy creamy smoothie goodness!

My son has been hanging out to use the cleaver on a young thai coconut again, so I think this one will get made in the coming days.
