I have been dreaming of donuts lately (no it's not ONLY because I'm fasting) but I found this on Ani Phyo's site:

Donut Holes
1 cup almonds, dry
1/4 teaspoon sea salt
1 vanilla bean, scraped
1 cup dried pineapple, chop
1 cup pitted dates
5 Tablespoons dried shredded coconut

Does anyone have her book? I think I might buy it, the reviews were pretty good and I'm always up for another uncooking book!

So do you blend this all up in the food processor all together? Or part of it? Then roll the balls into coconut?

Its all in her video, but the quick version is coarsely chop the almonds with the salt, in a separate bowl combine the rest of the ingredients but save 3 tbs of coconut (or 2 i cant remember...do 2.5 lol) mix it all really good, add the nuts, mix some more, then roll into balls and then roll into the remaining coconut.

i made these with dry pecans & medjoul dates. put it all in the processor after pulsing the pecans well. rolled in coconut.
very very good!

Mmmm I've been looking for something to use my pecans in other than a pie...I think these are on the menu this weekend! Gotta get me some wormless dates! ;)

I just made these (used the ingredients listed in the original recipe) and they are great! DH said they remind him of dough (not cooked donuts) and he is picky about flavors and textures of raw foods and he likes them.
I wonder about putting them in the dehydrator to crisp up the outer edge, might try this too! When I download the camera I will post a picture.

Okay, the idea appeals, but tell me the truth now - aren't these just like the old unbaked cookies, date balls? Are they just kinda gooshy inside and taste predominantly of dates (with coconut)?

Not doughy at all, I did stick mine back into the D for 2 hrs b/c my pineapple was not yet fully dried..and warm??!! OMGoodnes...they taste like cake donuts. I don't know what you americans can compare them to, but for us canadians, think 'Tim Hortons old fashioned plain, mixed with an apple fritter' but with Pineapple and minus the glaze.
I am not sure if these are going to make it past lunch to be honest. I think I am going to go for an hour bike ride today to make up for it ;)

NOW what am I going to do? This talent that everyone seems to have to come up with the most amazing things is going to do me in!
Anyway, jokes aside, thanks for the report. I now will have to determine whether I am woman enough to try them and LADY enough to not make a pig of myself.

Wow! This sounds REALLY good...and "apple fritter"??? :eek: . It's been a good 15 years since I've had one of those! :) I wonder how it would taste with dried apple substituted for 1/2 of the pineapple, and maybe a little cinnamon as well???

ooooooooooooooooooo ok thats the ultimate!!! Next round, I'm definitely going to try that...yum! Now all we need is the glaze - coconut oil as a base, agave, and maybe cinnamon...yaaaa there you're talking :)

It's best to soak and sprout the almonds, then dehydrate them. ;) You may get more bang for your buck that way, too, but for health, it is sooo hard on the pancreas to digest unsprouted nuts.
I really want to make these. Maybe sell some? I think the community would appreciate them! :)

I used dry almonds, but you are right, it is better to soak and redehydrate them. Next time.
I am definitely going to play around with the fillings. next time I am taking out the pineapple and doing apples and cinnamon.
Oh just to note, Ani mixed only FP's the almonds and salt, she mixed the rest by hand. I found it too chunky and ended up putting the whole thing in the FP and pulse chopped until it was a better consistency. Then rolled them into the coconut.
Variations I'm going to try...and we can thank Mr Tim Horton for some of these lol
Apple cinnamon glazed
Chocolate coconut (going to add raw carob to the mixture and raisins instead of pineapple)
Apple caramel pecan (instead of almonds, and apples instead of pineapple...then roll/glaze in a caramel sauce i saw floating around the board and dry/freeze until glaze is hardened)
Strawberry (or any berry for that matter)
ooo pumpkin pie!
The possibilities are endless!
darn I just realized I'm probably too late to submit these to the book...oh well, that will give me time to perfect the variations! ;)

I do have some fresh pineapple and thought of using it in my next batch (because we are eating the first batch so fast!) but think they'd need to be dehydrated for sure to get that donut texture to them.
And to use other fruits would be so good, I was also thinking of dried apples and cinnamon, yum! DH just can't stop eating them and he is not a big raw dessert guy. He said I should serve them to company and they'd never guess they were actually healthy!
And as I eat them I've been eating a fresh strawberry with each bite, something just delicious about that combination. Reminds me of the jelly filled donuts I think.

You know what?
I made some doughnuts last year but they were only okay. I made the bright frostings to put on top, etc, they looked pretty at least. It was an experimental itch I had to scratch.
BUT, I am thinking of just making these into actual DOUGHNUTS. Like smaller ones. Hmmm. Anybody try this yet?
Also, do they TASTE pineappley with the dried pineapple?

Want to make little donuts? Try using the little ice cube tray from IKEA that looks like a little donut. It is made of pliable plastic with a little centre thing for the hole. Pack the dough in there and then push them out into the dehydrator if they will stay in one piece, or freeze them first.

I just made another batch (using dried pineapple) and again we will eat them up quickly. Soooo good! I do want to try some other combinations (such as dried apple) and some frostings too, when I have some extra time, and I'll post what I come up with. Enjoy!
