Ice cream looks great. Was it made in ice cream machine. Please share including variations. Thanks.

This is very, very simple, but the key factor is that you MUST use an ice cream maker! If you've only made "ice cream" with bananas and a food processor, YOU ARE MISSING OUT!!! I will never settle for banana "ice cream" again!

I followed the suggestions HERE (http://karenknowler.typepad.com/living_in_the_raw/2006/02/what_do_you_mea.html), and started playing around. The chocolate ice cream base is quite simply...

Cashews
Water
Dates and/or raw agave
cacao powder

In the case of the chocolate chip ice cream, I replaced the raw cacao powder with real vanilla bean, and chopped up a raw chocolate bar produced by a small local company (http://www.stirsthesoul.com/) here in Portland.

I am still experimenting, and I urge you to do so as well. Play with different sweeteners, and quantities of sweeteners. Try different nuts, and combinations of nuts in your base. Add different fruits and flavorings. EXPERIMENT WITH THE CASHEW:WATER RATIO. Remember, you are going for thick and creamy.

Just think of all your old favorite ice cream flavors, and go for it!

Hi there,

I'm still using the frozen bananas and food processor method. I'm wondering what kind of ice cream maker you would recommend? I've been looking online and there are so many varieties. Which ones do you like?

Here is a batch of carob ice cream...

ALSO: I think 1 cup of water may be a little on the low side for the ice cream base. Perhaps 1 1/2 cups of water to 1 cup of cashews is ideal.

Thanks bunches for extensive information on your "secret" ice cream. I have two ice cream makers around here and never used one. I'm surely not short on equipment. Awesome brother.

Thanks for sharing this with us. When I saw the photos of this on the photo page I was really intrigued because it looks like real ice cream. I've tried the banana blender type and there is this after taste with frozen banana ice cream or maybe it was the vanilla mixed with the banana.

Anywho this looks amazing.

This is the one I have too, I bought it several years ago and still have not used it! But this thread is going to influence me to get it out and try some recipes. I am motivated now and it is summer here in Seattle!

Is it best to eat the ice cream right away or does it freeze and store well? I would like to stock the freezer, but want to make sure it holds up ok before doing so.

Oh, yes, the ice cream recipe that I posted freezes very well. After the ice cream maker is done doing its thing, I scoop it into a rectangular Gladware container like the one pictured here...

When frozen, the texture becomes much firmer, and almost identical to the consistency of Hagen-Dazs.

This ice cream sounds divine! I'm glad the ice cream thread repeated itself, because I might not have found it otherwise!;)
What about other nuts? I have found cashews a bit acidic....how about almond milk, with less water, and maybe some coconut processed with the same water to add some fat. Like, I have some shredded organic coconut in the freezer...what if I combined almonds and coconut.....maybe I'll just try it. I am getting tired of banana ice cream and think I need a change...this might do the trick. I also have a cheapo rival ice cream maker that has been sitting unused....I'm breaking that baby out today!!

My ice cream will be CAROB, no cocoa in the house:o I sure wish I had some.

???? How much ice cream will this make? I have a 1.5 qt. maker...will this fill it up? OR just make a couple of cups of ice cream? I'm a huge ice cream junkie!! This has been a weekness for me....

This was probably already mentioned by someone in a previous thread...but maybe not...

I found that if I make the mixture in my blender...freeze it...then pop it out of the container onto a cutting board. Cut the pieces into ice cube size...and then throw them into the food processor. A little more time consuming..but you won't need the ice cream maker.

I also add a bit of salt to balance it out.

I think you can use almonds..but you would have to strain them and it wouldn't be as creamy.

A girl after my own heart! :D This is what I do...'cept I just pour into ice cube trays so I can just plop 'em out and then whip 'em up in the FP. Me and the kiddies LOVE it! I haven't tried Andy's chocolate chip variety yet, though...but I plan too soon! - So far I have mainly only done it with just vanilla or strawberry flavors.

This place is great for learning new tips. I always come here when I have a dilemma.

I got the raw ice cream flowin' from the soft serve machine at my juice bar now.

In the time it took me to read this thread, I made the ice cream!! I made strawberry (used about a cup of strawberries). AWESOME :D Thanks!

I think next time I'll use less agave though, pretty sweet. This came so timely as I have a few friends interested in raw who wanted me to bring something "yummy" to our craft-get-together tomorrow. I was planning on bring Alissa's enchiladas, but this will be awesome for dessert! (I've got chocolate sauce too ;) )

I just made this! It's my new favorite recipe. I made chocolate with some strawberries. It came right out of the ice cream maker firm and ready to scoop out and eat. yummy! yum! yum! :)

Hi Andy. How is the weather in Portland Oregon? I'm from Portland. We moved to Tennessee in Feb 2007. I love TN, but really miss the wonderful health food stores in Portland. Sorry, I know this isn't food related, but it's great to see someone from home. (Tad homesick.)
