View Full Version : recipes for raw, sprouted buckwheat

I've sprouted too much buckwheat. I need some different ideas for recipes to use it in. I've already made Energy Flat Bread (our staple) and Valya's raw bread and dehydrated some for cereal.

In the past, I've used it in granola, Buckwheat Bars (yummy, they remind me of Rice Krispy treats), crackers, bagels, cinnamon rolls, salad sprinkles, sausage (all of them raw, of course) and I can't think of what else.

Anyway, I guess I've used it for a lot, but I'm looking for inspiration...something I haven't tried before. Any ideas?

You could let it grow into buckwheat lettuce. It's supposed to taste like "real" lettuce. Like a spring green, small leaves.

on how much you have, Alissa has one for burger buns in her book. Have a dehydrator? You can also blend it with o.j. and some other stuffs, dehydrate and make cereal with it. Juliano calls dehydrated buckwheat ~ buckwheaties.

Juliano has a raw torte that I made for Thanksgiving before last and it uses buckwheaties (dehydrated buckwheat) and it is SO GOOD!

Just off the top of my head, maybe a "Nestle Crunch" sorta thing using that raw chocolate recipe that was posted here recently and adding those...sounds like it would be good!

The other things are to make granola, a raw burger recipe or tabouli.

I've tried almost all those things except Juliano's torte, so I may give that a try!

PixieGreen, don't you have to use the unhulled buckwheat to make the greens? I've never done it before, but I thought I read that somewhere.

Revell, I've never tried mixing it with oj for cereal. I bet that tastes good.

Rawkinlocs, I have made a nestle crunch type thing before, and that is so good. I'll have to try it again.

Sweetlips, yes, I LOVE Serene's pecan rolls, those were the cinnamon rolls I was referring to. I feel so guilty when I eat them, because they taste like the real thing! LOL. That recipe is pure inspiration.

Oh, I didn't know you could sprout the hulled kind. :) Care to try and experiment with a few of yours to see if they'll get big?

There's a Honey-Nut Cereal recipe floating around here somewhere. Maybe someone can point you to it.

Apple-Raisin Scones

makes about 20 scones

4 C buckwheat, sprouted
1 C dates, soaked 20 min
1 tsp vanila extract (optional)
2 apples, cored and sliced
1 C raisins, soaked 20 min

Place all ingredients except the raisins in a food processor and puree. Stir the raisins into the puree. Shape the mixture into rounds 1/2 inch high and about 3 inch in diameter on solid dehydrator sheet and dehydrate 4 hours. Remove the dehydrator sheets, turn the scones over onto the dehydrator tray, and continue dehydrating for another 6-8 hours or until scones are dry on top.

Berry Good Scones
Makes 24

2 C buckwheat, sprouted
2 peeled bananas
3/4 C dates, soaked 20 min
1 tsp cinnamon
1/2 tsp cardamon
1 tsp vanilla (optional)
1 C blueberries

Combine all ingredients except the blueberries in a food processor and blend. Stir in the blueberries. Drop the mixture in scone shapes (rounded triangles) onto solid dehydrator sheet and dehydrate 4 hours. Remove the dehydrator sheets, turn the scones over onto the dehydrator tray, and continue dehydrating for another 4 hours or until dry.

Both recipes are from the book Rawsome!

Hi, i am also looking for recipes to buckwheat, how do you make buckwheat bars, or even bagels for that matter.... i am new to this so any advice would be great.. does anyone know of a great bread to make, for sandwhiches or for sides with some soup...

I'll let bud Brigitte Mars, Rawsome, know scones are a hit. Carmella loved the picture at your blog. I'll probably see her soon. She's part of our raw community.

Brigitte just came out with a beauty book--her daughter on the front cover althought I don't know if that is mentioned and her on the back cover.
