Hey everyone! I just made some almond milk for the first time. I am sitting here enjoying a glass right now. I was shocked and pleased at how smooth and frothy it came out - and it's delicious, especially with a vanilla bean added to the mix! Can I use it in smoothies or will it make the texture all funky? I'd like to because I've been reading and the benefits of almonds seem worth it.

Also, I have a big bowl of beautiful almond pulp now..It looks amazing and I cannot bear to compost it - I want to use it! I do not own a dehydrator, but is there anything I can do with it? Any suggestions would be amazing because I don't want it to go bad - that would be such a shame!

Thanks everyone!

Megan

Hi Megan,

I absolutely LOVE almond milk and it's even better in my smoothies. So refreshing. Give it a try in your smoothies! You can use the almond pulp in recipes that call for "flour", like "breads", cookies, crackers/chips, pies, crusts, etc. I'm sure others will add on and you can also do a search to find out more info. Also, the almond pulp will go bad in a few days or so. It'll get a sour smell to it. You may wanna dehydrate it and put it in the freezer to use at your leisure.

Hey thanks! my problem is that I don't have a dehydrator, so it's not an option...

I will try the milk in smoothies though - thanks! I am trying to maintain my weight - I wonder how it would taste with a banana?

Also, does anyone know how long the milk will last in the frigde, or should I just make small amounts at a time?

You can freeze the pulp and blend in with frozen bananas for shakes; use as a skin exfoliant, freeze and then thaw as needed to add into nut pate's, make refrigerator cookies by adding it to the other ingredients in cookie recipe and then instead of dehydrating them, just shape and refrigerate; use in fudge recipes that might use nuts as a base or just blend in with smoothies (as Zuri suggested) to make them thicker and more filling.

You're welcome! Also, I was just thinking that perhaps it could be added to any date-nut balls-type of treats you might make as well...just whenever a recipe calls for nuts that isn't dehyrated (or some that ARE, but you'd just eat as/is), try adding the pulp to it. But yeah, for storage purposes so it doesn't go bad on ya, freeze it! :)
