View Full Version : Alissa's Key Lime Pie question

Hi everyone,
I'm in the middle of making Alissa's key lime pie (for breakfast! I have a mad lime craving) and it says to food process 3 whole limes. Does this mean rind and all? I know zest can be used, but won't the white pith make it bitter? I'm not sure if she wants us to peel them or not! The recipe also says 2 avocados, and I know you don't put in the peel of those, but I'm just not sure.
Any help ASAP would be great as the pie is half made and I'm hungry. :p

I've never made the key lime pie but several days ago I made her lemon pudding and that recipe called for 2 whole lemons (but she also indicated, "peeled") and I do notice that on the key lime it doesn't say. However, if it were ME making this, I'd peel them AND de-seed them if I weren't sure...I'd just do that anyway.

As for avocados, yeah, remove the skins and pits.

That makes sense, I'll get rid of the white bitter pith and maybe add a little lime zest for the kicky flavor! Thanks for the reply; I'll let you know how it turns out.

Here it is! It tastes pretty yummy, I added about 8 small limes instead of the 3 large because it needed more to cover up the avocado flavor. It's pretty good, just wish the crust could be firmer (maybe a dehydrator would do that? I'm waiting for mine in the mail) and that the lime filling could be as creamy as the non-raw version. But it'll do!

Key Lime Pie
This is one of my husband's favorites. Tart and sweet at the same time, it really hits the spot!
Makes one 9" pie, serving 8-10

Crust Ingredients:
3 C fine almond flour*
4-5 fresh medjool dates
2 T coconut oil
1/2 tsp. sea salt
Filling Ingredients:
2 small ripe avocados
1 banana
1 1/4 C juice from key limes (regular limes will also work fine)
1/2 C mango chunks
1/2 C agave nectar
1/3 C coconut cream concentrate or oil
1 1/2 tsp. vanilla
Preparation:
To make crust, place almond flour, dates, coconut oil, and sea salt in a food processor and blend until it balls up. Firmly press crust into pie pan and set aside.
To make the filling, process all filling ingredients in a high-powered blender such as a VitaMix until smooth and fluid. Pour into pie shell and freeze about 4-6 hours or longer. I like to serve this topped with a little shredded coconut and mango chunks or slices.

*Almond Flour is made when you grind almonds for making almond milk. Almond pulp is what is left over. After the grinding process, strain it as much as possible and dry it in your dehydrator. It is kept best in the freezer in an air-tight bag or container.
If you do not wish to go through this process, you are certainly welcome to just use ground raw almonds, but you won't get the same fine texture on the crust.

Hey thanks SchoolofRawk for the alternative- I will probably try it once I get the craving again :) I was wondering how I could use that almond milk pulp! I can't wait to get my dehydrator!!

Yes, I always make the same crust: raisins and soaked almonds blended. I can eat it straight. Yum yum yum. Always gets firm. Always easy to use.

Let us know how the pies turn out!

Almond pulp makes a great LOAF, which can then be made into patties. Plus, I posted a good crouton recipe up here, just search for it. They work great for that!

Hey Orryally,

Last weekend I made the key lime pie from the recipe Erica (SchoolofRawk) posted. It comes from our dear, Anna, aka MaRaw of http://www.therawtable.com. This stuff is amazing and soooooo creamy. I think perhaps the coconut oil helped with that?

Anyway I suggest making the recipe EXACTLY as called for. My dh who does not care for key lime pie loved this, as did our not-at-all raw friend. I missed the part on the crust so actually I just had the filling in a ceramic pie plate but it was great anyway.
