View Full Version : Hubby lost 16 pounds in the April 30 day challenge!

And I am sooo proud of him I just had to make a special post just for him!

Keeping in mind he was eating a pretty SAD diet with the addition of lots of green salads and fruits that I always provide with meals, he'd decided he wanted to do 1 month of raw to try and lose some weight.

Well he did awesome, in fact better than I did since we did the challenge together. I slipped a number of times and by the end of the month he mentioned that he believed he'd done better than me (long term raw foodist!) and he was right!

That really encouraged me to get right back onto plan and finished the month up with him right on track. So 16 pounds gone for him and he asked if we could another month, so May... here we are again!

I did meet my weight loss goal for April of 6 pounds, but just barely with the scales showing the loss just yesterday of that last pound I'd hoped to lose.

So he will decide on his weight goal for May and I have about 2 more pounds to go. I love doing this with him, not having cooked foods around for temptation and with no cooking I have so much more TIME! We eat very simply and it is sure quick and easy and I love that so much. Much more time for so many other things now!

If anyone is interested, his food intake consisted of lots of bananas, dried figs and pecans, cabbage wraps and a taco salad that I make that he loves and could eat daily. It is pretty simple with these being the things he likes so we went with that flow. I ate a lot of green smoothies, large salads at lunch or cabbage wraps, and almond banana shakes in the evenings. I also eat a large variety of fruit each day. And we do splurge on those delicious Truffles that Alissa sells, yum! And there are a few raw desserts I make that he also enjoys along with banana ice cream.

Just had to share, he looks great and lost most of his tummy where his main weight gain always occurs. May... here we come!

Edit-I should also mention, I really lost my tummy bloat this month. I am sure it is because of not eating wheat or gluten products, even if it was only infrequently that I did. I am so pleased and my digestion is so much better now!

Congratulations to the both of you. That is wonderful.

So...........would you share your taco salad with us? Sounds delicious and like something my husband might like.

I sure will! I am just heading out of the house right now but I will post it tonight (hopefully) along with a picture! I love visuals of food!!

Here is the Taco Salad we are so enjoying. You can vary it so many ways too.

Layer in a large bowl
Greens-any type of lettuce, spinach, cabbage
Corn chips-broken up (Alissa's recipe)
Rich Cheddar Sauce (recipe below) I drizzle it over the chips
Salsa-I buy a locally made raw one that is so good!
Corn
Tomato and avocado-chopped up
Green onion or any type of onion chopped up
Alissa's Onion Dip if you want a sour cream type of sauce
Add any other veggies like grated carrots or diced cucumber

Enjoy! And I'll post a picture later when I get my camera downloaded.

Rich Cheddar Sauce
From Rejuvenate Your Life by Serene Allison

1 large red bell pepper
1/2 c. water
3/4 c. raw cashews, sunflower seeds, or almonds (I use 1 c.)
1 T. tahini
3 T. nutritional yeast
1 ½ tsp. sea salt
2 tsp. onion powder (I use a small slice of onion.)
1 clove garlic
2 T. lemon juice
Whiz in blender until creamy. Add more water if it is too thick.
