Growing up, my favorite dinner was the lemon chicken my dad made. Carrots and chicken chunks with carrot discs on white sticky rice.

So I made a raw version for meself... success! =) "lemon unchikun wraps" I'll call em.

Oh duh - sure. Here ya go.

For wrap:
Thinly slice peeled carrots lengthwise on mandolin slicer
Cut a small piece to use as a "toothpick" - cut with the tip of a knife (carefully) a hole in each end of the carrot strip, and insert "toothpick" piece to fasten wrap.

Filling:
2 cups of cauliflower
1 cup of soaked sunflower seeds, ground
3-4 scallions
2 lemons, juiced

Process cauliflower in FP with juice from two lemons. (this is the "rice")
Drain, then grind sunflower seeds (this is the "chickun")
Take small amount of sunflower mix and small amount of "rice" and a few bits of diced scallion - mush together and put inside carrot wrap.

Garnish with scallions and a squeeze of lemon juice and enjoy.

Thanks! Thats nice and simple. I never make recipes save green smoothies but maybe sometime I'll try this.

Aw. Sweet of ya to say, but it's all about experimenting! I tend to stick with the simpler stuff these days, to be honest. The spaghetti pie I made (another of Dad's recipes converted to raw) was yummy, but I only had a couple of servings and I was back to salad and fruit!

Hey creative girl, please please tell me how (my Duran Duran spoof). How did you make a spaghetti pie. That sounds awesome. I used to love spaghetti, especially refried. (Ever had that?)

Giggle. No prob, E.C. Girl. I'll post it on a separate thread right now, as you're not the only one to have asked.

As for fried spaghetti - um - NO - have not had it, but now am scheming on how to make it, as it sounds delectable!!!

For an even faster version, just slice the carrots and serve it all together as if on a bed of "rice."
