Wheatberries are soaking - best bread recipe?

I've got a bunch of wheatberries soaking (the soft kind) and I'm looking through Alissa's book at the bread/crackers recipes - they all look good and I don't know which one to make. Anybody made these before that can tell me your favorites?

I made flax seed crackers from Alissa"s book and it was simple enough to make. Having a good dehydrator has made a big difference in making good flax seed crackers. Doughnut dehydrator from Walmart don't work as well with 9 tray Excalibur dehydrator that I bought ordered last week.

Just find a more simple recipe to work with and take it from there.
